- In a saucepan, combine raspberries, 2 tablespoons sugar, cornstarch, and water. Bring to boil, and continue boiling 5 minutes, or until sauce is thick. Strain sauce through a mesh strainer to remove seeds.
- Preheat oven to 325 degrees F (165 degrees C). In a metal bowl over a pan of simmering water, melt white chocolate chips with half-and-half, stirring occasionally until smooth.
- In a large bowl, mix together cream cheese and 1/2 cup sugar until smooth. Beat in eggs one at a time. Blend in vanilla and melted white chocolate. Pour half of batter over crust. Spoon 3 tablespoons raspberry sauce over batter. Pour remaining cheesecake batter into pan, and again spoon 3 tablespoons raspberry sauce over the top. Swirl batter with the tip of a knife to create a marbled effect.
- Bake for 55 to 60 minutes, or until filling is set. Cool, cover with plastic wrap, and refrigerate for 8 hours before removing from pan. Serve with remaining raspberry sauce.

The Ford Story
Part 2:
In the series on Ford's incredible Mustang. As the popularity increased for the Mustang, people discovered they could order a car to suit their lifestyle. Coupes with six cylinder engines were as popular as V-8 fastbacks. The 1965-66 Mustang was a crisp, clean design offered in a variety of colors. The one option missing was a larger V-8 engine. So in 1967, a big block, 390 cubic inch engine was offered. 1967-68 Mustangs were styled with a slightly longer, sleeker body with a few more upgraded trim features. 1968 also saw the introduction of Ford's venerable 302 cubic inch engine. As the end of the decade approached, Mustang kept right up with the times, offering a more refined interior and larger, more powerful engines such as the 428 Cobra Jet.
In 1969, the Mustang Boss 302 and Boss 429 added a new level in power and sophistication not seen in earlier models. The beautiful 1970 Mustang brought the sixties to a close, and some challenges awaited in the seventies. For 1971, Ford introduced an all new Mustang that had a longer and bigger body. This version lasted only three years, and in 1974, with stricter emission regulations and fuel economy requirements, a completely different Mustang was introduced. The Mustang II debuted in 1974 to mixed reviews. Enthusiasts seemed to stay away but Ford still sold a lot of these small, economical cars, and they remained pretty much the same until 1979, when a whole new Mustang started a "second coming" of the legendary pony car. Ask anyone remotely interested in cars and I bet a 5.0L 5-speed Mustang from 1983 to 1994 would be close to the top of their wish list. These cars were inexpensive, reliable and fast. Very fast. And with tons of speed parts available from Ford and the aftermarket, these cars could be modified for unbelievable performance.
Ford's rock solid 302 cubic inch (5.0L) V-8 engine, coupled with a bulletproof drive-line and performance tuned suspension proved to be a winning combination both on and off the track. From the mid 80's on, there were probably more high performance parts offered for the Mustang than any other car. Ford sold millions of the "Fox body" (an internal Ford code name) Mustangs. And just like the early versions, you could order it pretty much any way you wanted it, from mild to wild. People thought the Mustang had reached its peak in popularity. But they were wrong. Stay tuned for the final chapter on Ford's little pony car. Until next time, Mark

Bo's Green Tip
Refurb Your Way to Stylish Decor!
Instead of tossing out old and worn furniture, reupholster it to bring new life, and cut down on waste and further resource use.
Many antiques dealers would kill to get their hands on the bones of much of the furniture that is unceremoniously thrown away, left out in the weeds or even burned as firewood. Between 1960 and 2001, discarded furniture and furnishings swelled from 2.2 million tons a year to 8.1 million tons, reports the EPA. Furniture is bulky stuff that takes up a lot of landfill space.
Extend the life of furniture, and save money, by getting it reupholstered. Get crafty and do the job yourself, or support local artisans who specialize in the time-honored trade. The range of possible colors, textures and styles is nearly limitless, from ancient aesthetic to uber-modern. Get the freshest look to match your changing decor tastes without contributing to the removal of more trees or the mining of more metals.
