Bo's Kitchen
ClassicoŽ Spaghetti Carbonara 
Ingredients 1 (16 ounce) package spaghetti pasta1 (15 ounce) jar Light Creamy Alfredo Pasta Sauce*4 eggs, beaten1/2 pound thinly sliced pancetta*2 chopped large shallots2 teaspoons minced garlic1/2 cup dry white wine1/2 cup freshly grated Parmesan cheese1/4 cup chopped fresh flat-leaf parsley Directions
Cook pasta al dente according to package instructions and drain, reserving about 1/4 cup of pasta water. Return pasta to pot and cover to keep warm. In a medium bowl, whisk together Pasta Sauce and eggs, and set aside.
Meanwhile, in a large skillet over medium heat, brown pancetta for 3 to 4 minutes, or until crisp, turning occasionally. Place pancetta on paper towels and coarsely crumble or chop, reserving drippings.
In the same skillet with reserved drippings over medium high heat, cook shallots and garlic for 2 to 3 minutes, stirring occasionally. Stir in wine and cook for another minute. Remove skillet from heat.
Return pasta pot to stovetop over low heat. Add shallot mixture to warm pasta and lightly toss with tongs.
Slowly add Pasta Sauce mixture, a little at a time, tossing pasta frequently to prevent eggs from scrambling. Cook for 4 to 6 minutes, or until sauce is cooked through and thickened. Add reserved hot pasta water if needed to thin sauce to desired consistency. Add cheese, parsley and pancetta crumbles, and cook for another minute, stirring frequently. Season with salt and pepper to taste if desired. Serve immediately.

The Ford Story
On March 9, 1964, at Ford's Dearborn Assembly Plant, nothing short of an unimaginable phenomenon first rolled off the assembly line. Mustang. No other automobile can come close to its instant name recognition. Millions of people have owned and driven Mustangs since its introduction at the New York World's Fair in April 1964. It's been woven through the fabric of Americana in songs, movies and folklore for over 45 years. Mustang is credited for creating a whole new generation of cars called "pony cars." known for their long hood/short trunk lid design. Since the history of this American icon would take more space than could be written in one setting, I will make this a multipart series, starting with the early Mustangs. As cars evolved from the late 50's to the early 60's, they got longer, sleeker...and bigger.
Marketing research revealed that the motoring public was ready for a smaller, fun to drive car that was inexpensive to own. So Ford went to work. Designers used most of the mechanical components from Ford's unassuming Falcon, and offered coupe, fastback or convertible models. Six cylinder or V-8 engines with manual or automatic transmissions were available and a vast selection of trim levels and options guaranteed everyone could get something they wanted. And it seemed everyone wanted one. Ford simultaneously sponsored commercials on all three major TV networks on the evening of April 16, and on the next day over 22,000 Mustangs were ordered in jammed dealership showrooms. Mustangs were being sold even before they could be unloaded off transport trucks. At first, overwhelmed dealerships were not equipped to handle the sea of people wanting Mustangs, so Ford stepped up production, and by March 1966, over 2 million Mustangs were sold. 1965 and 1966 models were virtually identical, but changes were coming for the 1967 models. Switch To Refillable Mugs!!!
Reduce waste, as well as toxic chemicals in the environment, by using a reusable mug at home, in the office and on the go, instead of opting for single-use containers for coffee, tea and other beverages.
If you buy your daily cup of coffee in a disposable container, you are generating about 22.75 pounds of waste per year. Across the country, 25 billion polystyrene (commonly known as Styrofoam) cups are thrown away every year, according to the EPA. That's troubling, because polystyrene takes hundreds of years to break down, and is made of nonrenewable petroleum. Scientists have also discovered carcinogenic compounds leaching out of polystyrene, possibly even into your hot drink!
Cups made of paper products are easier on the environment, but they are made of trees and can result in destructive deforestation. Even recycled paper cups require considerable energy to produce and distribute.
It's wise to use ceramic or glass containers for your hot beverages, because plastics can leach out small amounts of potentially toxic chemicals over time, particularly pthalates and bisphenol A. If the risk of breakage is high, and for on-the-go uses, consider stainless steel.
As an added incentive, remember that many coffee shops and university food services offer discounts for those who bring in their own reusable containers. Starbucks, for example, offers a 10-cent discount to those with their own mugs, and this encouraged 13.5 million customers to help keep 586,800 pounds of paper from landfills in 2003.
