Greetings Beuckman Buzz Subscribers!
New Years Resolutions:
What was your resolution for this year? Will you work hard at it or throw in the towel?
I picked a hard one this year. I'm going to stop smoking. I've picked it few times in the past, but I always through the towel and started again. This year is going to be the year I stop.
I hope that you are able to keep your New Years Resolution. We always seem to pick something that is hard to do. Whether it's to stop eating Milk Duds before bed time or if you're going to stop smoking too, we wish you the best.
Toy's for Tots Campaign: Thanks to everybody that dropped off toys this year. I thought it was going to be a small load of toys. But, when it got closer to Christmas the true spirit of giving came through. Thank you very much! You have put a smile on a childs face, and a parents face too.
Please enjoy this issue of The Beuckman Buzz.
Happy New Year's to Everyone!

Baked Lemon Chicken with Mushroom Sauce
Ingredients 6 skinless, boneless chicken breast halves 1 tablespoon olive oil 1 lemon 1/4 cup butter 3 cups fresh sliced mushrooms 1/2 cup chicken broth 2 tablespoons all-purpose flour 1 tablespoon chopped fresh parsley Directions
- Preheat oven to 400 degrees F (205 degrees C).
- Place the olive oil in an 8x8 glass baking dish. Place the chicken breasts in the dish, coating each side with oil. Squeeze the juice of 1/2 lemon over all. Slice the rest of the lemon and place a lemon slice on top of each chicken piece. Bake in the preheated oven for 30 to 40 minutes until brown.
- In a large skillet, melt the 1/4 cup butter or margarine. Add the sliced mushrooms. Cook and stir until the mushrooms are brown and have exuded their juices, about 6 minutes. Sprinkle with the flour and blend. Add the chicken broth, stirring to make a medium thick sauce. Allow to reduce, adjusting with a little more broth to make a creamy sauce. Add fresh parsley at the last minute. Spoon the sauce over the lemon baked chicken breasts. Delicious!

The Ford Story
Back in 1971, if you were thinking about buying a sleek Italian sports car that looked like it was going 100 miles per hour standing still, you probably wouldn't think about going to your local Lincoln Mercury dealer to get it. But that's exactly what you could have done and you would have driven out in a very powerful car called the Pantera, powered by a 330 horsepower Ford 351 cubic inch V8 engine. Lee Iacocca, Ford's president at the time, got to know the owner of the company that designed the Pantera, Alejandro De Tomaso, through racing. Iacocca and De Tomaso agreed to jointly produce the Pantera and market it through Lincoln Mercury dealerships. The car was built in Italy using a racing style chassis known as a monocoque frame which literally tied the entire car together under the body. The car was supposed to be a direct competitor for the Corvette, and a prototype debuted at the New York Motor Show in 1970. Originally, Ford thought that they would produce about 10,000 vehicles a year, but engineering setbacks reduced those numbers dramatically to a peak of 2,033 in 1973. However, those who purchased a Pantera got an exotic, 2 seats, and mid-engine sports car capable of reaching speeds up to 160 mph. It was priced at $9,995 in 1971; a relative bargain considering its Ferrari counterpart cost two and a half times as much. Due to the evolving safety standards imposed by the federal government, the Pantera was taken off the market in the United States in 1974. The car continued production to be sold in other countries through 1991. Since a relatively small number of Panteras were sold in America, they became instant classics sought after by car enthusiasts.

Until next time, Mark

Bo's Green Tip
Recycle Your Christmas Tree!
Make a dent in holiday waste this year by "recycling" your fresh Christmas tree after you are done celebrating.
Instead of taking up valuable space in landfills, where decay is painfully slow because of a lack of oxygen, Christmas trees can be readily ground into wood chips or made into useful compost. Considering that nearly 29 million households opted for a real Christmas tree in 2006, that's a lot of wood chips!
To make it easy, the industry group National Christmas Tree Association has teamed up with Scottsdale, Arizona-based conservation group Earth911 to point consumers in the right direction with their trees. On their Website, you can enter your zip code to find the nearest of 3,800-plus spots nationwide that accept old trees.
