As athletes we view the food we eat as fuel for the machine.  Healthy, clean food does not have to be boring!  Here is a great recipe from our friend Kelly Gaines.  Bon Apetit!

Quinoa Enchiladas Verde

INGREDIENTS
1/2 cup dry white quinoa, pre-rinsed
1 cup vegetable broth
1 teaspoon cumin
1 teaspoon chili powder
1/4 teaspoon cayenne pepper 
1/2 teaspoon black pepper
Sea salt to taste
1 1/2 reduced fat cheddar cheese, shredded
1 (4 oz) can green chili peppers, diced with juice
1 (16oz) jar Verde sauce
1/2 cup low fat sour cream or Greek yogurt
6 whole wheat tortillas (I used medium size)

Add pre-rinsed quinoa and broth to a medium pot, cover, bring to a boil. Reduce heat to a low simmer and continue cooking 15 minutes or until broth is absorbed.

Preheat oven to 375 degrees. Combine in a bowl the cooked quinoa, cumin, chili powder, cayenne pepper, black pepper, salt, and 1 cup cheddar cheese. Divide quinoa mixture evenly between the 6 tortillas (I actually ended up making just 5 enchiladas). Place the mixture on the center of each tortilla and roll them up. Place them side by side in a 9x13 casserole dish.

Combine green chili peppers, enchilada sauce and sour cream in a bowl, and then pour over enchiladas (it seems like A LOT, and it is. We used the rest with chips). Sprinkle with the remaining cheese. Bake until enchiladas are hot and bubbly (for me it was 15-20mins).


 
Training Tip:  Performing in the heat!

 

This month's training tip comes from the newest member of the Dreamchasers team, Damian Stoy.

Keep your "cool" this summer by hydrating properly, using quality supplements and relaxing your body and mind.   

  • Drink at regular intervals. I carry a water bottle and drink small amounts often, about every 10 minutes.  I shoot for 16-28 oz./hour depending on the conditions.
  • Take electrolytes at regular intervals to prevent cramping and hyponatremia (electrolyte deficiency caused by drinking too much water).  Electrolyte capsules work better than electrolyte drinks for providing the correct amount of salts. Take one every 20-60 minutes depending on conditions.  I use Hammer 'Endurolytes' and 'Salt Stick' but encourage you to find what works best for you.
  • Be more efficient by shortening your stride.  This will help you use less energy resulting in less heat production.
  • Slow down your body and mind.  Relaxing will help you stay cool both physically and mentally.

These suggestions can help you beat the heat and promote a more enjoyable run or race.  Something we all want!

   Dreamchaser Profile:  Tom Sperduto
This month we profile Dreamchaser Tom Sperduto from Oxford, New Jersey.  As one of Lisa's coaching students since 2009, Tom has worked very hard as a runner while maintaining his busy family and work commitments.  This year Tom is running 4 consecutive 100-mile races to raise money for breast cancer research.  He epitomizes what it means to have a dream and chase it down.  We are proud of you Tom!

Inspiration Corner

I think anyone who has any kind of love for running took inspiration from the running sequence in the movie Forrest Gump.  How many times have you been asked why you run as far as you do?  Most of the time I give them the Forrest Gump answer:  "I just felt like Running!"  Here is that sequence from the movie for a little bit inspiration for the Gump in all of us!
