ALA can help reduce inflammation in the body. It acts by blocking the formation of compounds that promote inflammation. Heart disease, type 2 diabetes, metabolic syndrome, obesity, cancer and Alzhiemers, among many other disease all have an inflammatory reponse in the body. Alpha-linolenic acid or ALA, is a type of essential fatty acid that acts like an anti-inflammatroy. In two tablespoons of milled flax seed there is approximately 3.6 grams of ALA.
ALA performs like an anti-inflammatory by blocking the formation of cytokines. In a study of 20 men and women with high blood cholesterol, people who ate a diet high in ALA had a significant decrease in the production of cytokines, compared with those eating an average American diet.
ALA also effects inflammatory markers by promoting the formation of eicosaoids through EPA (eicosapentaenoic acid). Eicosanoids control inflammatory reactions. These eicosanoids, though relatively mild inhibit inflammation in the body. ALA is also the precuror to EPA, which can be converted into powerful anti-inflammatory compounds called resolvins. One study examined this effect and found that diets rich in ALA significantly decreased the concentration of AA (arrachidonic acid, a type of omega-6 fatty acid) in neutrophles and in serum. Neutrophils are a type of immune cell that help control infections and inflammation. |

New Flax Recipe: Flax flour pastry |

Ingredients

ice water |
- Preheat oven to 425° F.
- Mix together white flour, flax flour, salt and sugar.
- Cut butter into dry ingredients until pea-sized, mealy dough is formed.
- Sprinkle with ice water, one tbsp at a time, mixing with a fork until all the flour is moistened and pastry almost cleans the side of the bowl.
- Gather pastry into a ball. Cut dough in half.
- Roll one half of the dough into a circle and place in a 9-inch pie pan.
- Fill pie crust with pie filling and bake as per recipe instructions. If you are not using the other half of the dough freeze it for later.

Hi, my name is Linda Haven. I live in Middleton, NS and have been using Valley Flaxflour for years! I use it myself and for my Miniature Longhaired Dachshunds.
I eat flax everyday in a fruit smoothie. I give my dogs have about 1/2 - 3/4 tsp with each 2 oz portion of raw meat and ground veggie meal twice a day. (My dogs weight approximately 7 to 9.5 pounds each). Valley flax flour helps us get more fibre and Omega 3's in our diet, and it tastes good.
I try to eat healthily and I want my dogs to do the same!

My friend told me that flax becomes rancid if not eaten 15 or 20 minutes after grinding. This is NOT true!
Milled flax from Valley Flaxflour Ltd. is stable when stored at room temperature for several months. This is most likely because of the powerful lignans that protect the polyunsaturated fats in flax from oxidation. |
