This year Dietitians of Canada Nutrition Month campaign focuses on the celebration of food from field to table. Discover ideas on how to celebrate food with your family.

 

Home Grown Canada - Discover some of Canada's wonderful food bounty. Canada is the largest producer and exporter of flax in the world! Saskatchewan, Alberta, and Manitoba produced a whopping 903 metric tons of flax in 2009 / 2010.

Fruit and Nut Bars
Ingredients

1 cup Dried fruit (apples and cranberries used for analysis)
1 cup Dry roasted nuts (pecans, walnuts or almonds)
1/2 tsp Cinnamon
1/4 tsp Salt
2 cups Quick oats
1/4 cup Flax flour
1/3 cup Warm water
1 tsp Vanilla
1/4 cup Honey
1/3 cup Semi-sweet chocolate chips

  

1. Preheat oven to 350 F (175 C). Spray an 8 x 8 inch baking pan with oil and set aside.

2. Place the dried fruit, nuts, cinnamon and salt in a food processor and pulse until finely chopped (the dried fruit should be the size of a pea).

3. Transfer fruit and nut mixture to a large bowl. Add the oats and mix together.

4. In a small bowl, combine the flax flour with the warm water. Let sit for a few minutes. Whisk in the vanilla and honey.

5. Add the wet ingredients to the oatmeal mixture and stir until well combined. Stir in the chocolate chips.

6. Place in a baking pan and press down with a spatula. Bake for 18 to 20 minutes. The edges should be golden brown. Let the bars cool before removing them from the pan. Cut 3 x 7 to make 21 bars. Store in an air tight container.
