สวัสดี  Sawatdi!

Greetings!

That is how to say hello in Thai. Actually, if you are a woman you would say "sawatdi ka" and if you are a man you would say "sawatdi krap."

--------

In today's shrinking world, it is important to reach out to others, to learn about and feel comfortable with the varied cultures of our neighbors in our communities and across the planet. Unfortunately, you just have to watch the news every day to know that not only intolerance but hatred still exists due to ignorance of and discomfort with different cultures. The diversity of humankind needs to be celebrated as much as the diversity of nature, for both bring beauty, strength, and resilience to the world. It is important to help our children celebrate the beauty in diversity. Providing them with a breadth of experience from an early age helps them to grow up aware of and comfortable with the variety of ideas that exist. We encourage you to open your children up to new experiences.... take a class, visit a museum, try a recipe (see our recipe for Serbian meat strudel below!), travel the world, ... move out of your comfort zone.

Happy explorations!

If you qualify and are interested in participating in the Family Membership program, contact info@globalexplorerskids.org for more information. Spring registration is open from May 1 - 31.
Recipe Corner - Burekusa (Meat Strudel)
My grandmother came to the United States from Herzegovina in 1913. At the time, Herzegovina was part of the Austro-Hungarian Empire. Previously, it has been a part of the Turkish Empire. Later, it was part of Yugoslavia, and now, it is part of Bosnia. Needless to say, this piece of land has switched hands a lot through the centuries, a fact that is evident in the cuisine, which has been influenced by many traditions.

I have many Serbian friends who say they have never heard of Burekusa (which is unlike the more common Burek). Nevertheless, my grandmother brought this recipe to the United States when she came from Herzegovina and passed it along to the family.

Ingredients:
1 large onion     2 celery stalks     1 green pepper    4 cloves garlic
2 lbs ground meat (beef and/or lamb)     2 eggs     salt/pepper
phyllo leaves     oil

Chop vegetables finely. Mix with ground meat, eggs, and salt and pepper to taste. Preheat oven to 350 degrees fahrenheit. Lay out one phyllo leaf. Brush with oil. Lay another leaf on top. Brush with oil. Repeat until you have four leaves with oil. Spread some meat mixture over one end of the leaves. Roll. Place in an ungreased baking dish. Repeat until all the meat mixture is used up. Brush the tops with oil. Cook for about 1 hour, until brown.  Cool, then serve.
