Greetings!   

Finally... summer has arrived, and things are really heating up around campus:
  • We're gearing up for our Annual Open House. With the grand opening of our new Fitness Center, there is more to see than ever before. And, with expanded hours, more time to see it!     

Finally, Executive Chef Justin Rutledge shares a recipe for house-made granola that will give you a jump-start on these long summer days.

Community gathers to celebrate the Grand Opening of the new Fitness Center

On Monday, July 2, the Emerald Heights residents and staff gathered to celebrate the grand opening of the new Fitness Center, nearly one year after construction began.  

 

The new Fitness Center -- more than twice the size of the previous building -- features:

  • A 30' x 60' swimming pool with zero-gravity entry (ramp system) for lap swimming and aquatic exercise programs;
  • Jacuzzi spa;
  • Exercise class room for popular group classes, like tai chi, yoga and aerobics;
  • Equipment room with state-of-the-art Keiser and SCIFIT equipment for strength training and cardiovascular exercise programming respectively;
  • Men's & women's locker rooms; and
  • Spa with massage therapy room and salon services (hair care, manicures & pedicures.)

A large crowd gathered to witness the ribbon cutting and then take a tour of the new space. Residents quickly joined in the water aerobics and chair aerobics fitness classes, and tried out the new, state-of-the-art fitness machines.

Park and ride  
Park at adjacent Redmond High School, located at 17272 NE 104th Street.
Shuttle buses will run every 15 minutes to the Emerald Heights campus beginning at 9:45 a.m. The last shuttle from Redmond High School leaves at 3:30 p.m.

As we celebrate our country's independence this week, I've been thinking about the spirit and determination required to accomplish such a feat -- from our founding fathers to those who serve in our military.

This month, our community is honoring those who have served with a wall of honor. It's been fascinating to learn about these residents and their distinguished histories.

It also got me thinking about how we all still hunger for independence and are willing to fight for it.

Chef Hat
House-Made Granola


Makes 1 quart

Packed with oats, nuts and seeds, this energy booster can be made up to one week ahead. Serve it as a snack, or for breakfast with yogurt and any kind of seasonal fresh fruit.

Ingredients

2 cups
 Old-fashion oats
1/4 cup
 Millet
1 T.
 Flaxseed
3/4 t.
 Salt, divided
1/2 t.
 Ground cinnamon
1/4 t.
 Ground ginger
1/3 cup
 Honey
4 T.
 Extra virgin olive oil, divided
2 T.
 Brown sugar
3/4 cup
 Raw almonds, coarsely chopped
1/3 cup
 Raw shelled pumpkin seeds
1 T.
 Sugar
½ cup
 Raisins
 Yogurt
 Thinly sliced mangoes, or other fruit

 

Millet and flaxseed can be found at natural foods stores and some supermarkets.

Method

  • Heat oven to 300 degrees.
  • Mix oats, millet and flaxseed, 1/4 t. salt, cinnamon and ginger in a medium bowl. Add 1 cup of hot tap water. Mix thoroughly and let stand for 15 minutes to soften oats.
  • Bring honey, 2 T. oil, and brown sugar to a boil in a small saucepan, stirring to a dissolve sugar.
  • Add honey mixture to oat mixture in bowl and toss to coat.
  • Spread out in an even layer on a large rimmed baking sheet.
  • Bake oat mixture, stirring 2-3 times, until dark golden brown, about 50 minutes.
  • Place baking sheet on a wire rack and let oat mixture cool completely.
  • Increase oven temperature to 350 degrees. Mix remaining 1/2 t. salt, remaining 2 T. oil, almonds, pumpkin seeds, sunflower seeds and sugar in a medium bowl.
  • Spread in an even layer on another rimmed baking sheet.
  • Bake, stirring occasionally, until golden brown, about 10 minutes.
  • Place baking sheet on a wire rack and let cool completely.
  • Combine oat mixture, nut mixture and raisins in a large bowl.
  • Serve with yogurt and sliced fresh fruit.
