Capacity Crowd Learns to Live with Less Stuff, More Freedom
A capacity crowd of 100 guests attended our seminar in January, where Eric Rovner from Benevia Household Transition Services shared tips for downsizing and making smaller homes "live bigger."

RECIPE FROM CHEF JUSTIN

In honor of American Heart Month, Chef Justin shares his best-selling, heart-healthy recipe for you to try at home.
Sweet and Sour Shrimp
Yield 4 servings Ingredients
- 1 Cup of thin sliced carrots
- 1 Cup julienned green pepper
- 8 Medium scallions, cut into 1/2" pieces
- 3/4 Cup drained water chestnuts
- 1 t. grated ginger
- 1 Cup canned pineapple chunks, drained, reserve 1/4 cup of juice
- 12 large shrimp, peeled and deveined
- 2 T. Soy sauce
- 1 T. Brown sugar
- 1 T. Cornstarch
- 1 T. Cider vinegar
Preparation
- Sauté carrots,, bell pepper, water chestnuts, scallions and ginger until soft.
- Stir in pineapple chunks into mixture; sauté shrimp till just pink.
- Add soy, brown sugar, vinegar, pineapple juice, and ¼ cup of water. When simmer begins add corn starch to ¼ cup of water to thicken sauce.
- Combine vegetables, shrimp and sauce together.
Per Serving: 164 calories, 1g total fat, 0g saturated fat, 86mg cholesterol, 302 mg sodium, 16g carbohydrates, 3g dietary fiber, 133g protein, 63mg calcium
