salsa fish2John cooked a fabulous tilapia dinner the other day. Just threw a couple of frozen tilapia pieces in a fry pan (with a touch of oil), cooked it for a few minutes, then topped it with a small (7oz) can of Herdez Salsa Casera (in the ethnic section of the grocery store. Delicious and spicy...and really fast!

Getting Unstuck
 
Chances are, no matter how put together your life is, you probably still struggle with one issue - we all do! My new speaking program, "Getting Unstuck from the Inside Out", helps us break away from pre-existing beliefs that keep us stuck in our struggles.
 
After naming their struggle, participants start a long list of reasons WHY they are the way they are. For example, at a recent program, one woman said she "couldn't workout" because she worked the night shift. And, I'll admit her "work days" sound packed! But, as another participant suggested, she only works 3-4 days, so why doesn't she fit her workouts into the OTHER 3-4 days...and not stress out about not working out on the work days?
 
In another conference one of the participants said she didn't have time to workout because she still had young children. Other participants yelled out ideas including playing tag with the kids, pushing them in the baby jogger, running around the ball park while they're at ball practice.
 
What's holding you back from achieving your health goals? Challenge those long-standing beliefs (excuses) for success! Step #1 is to Dispute It - instead of carrying it around like a crutch! In most cases, there are solutions!

When my friend, Bob, doesn't have time to get in a workout, he says he still does a few simple exercises such as jumping jacks, sit up, and push-ups. What can you fit in during the TV commercials or while the fish is cooking? Go on...be creative...stay lean!

Tips for Asian Dining - Learn from Pei Wei
 
After leaving the TV shoot, we grabbed a quick meal at Pei Wei (pronounced PAY WAY). This small chain (150 locations), owned by P.F. Chang's China Bistro, offers moderately priced Asian cuisine.
 
I love the food here...but not the calories (even the nutritional information is offered as "2 servings per dish"). So, I asked how I could make it a bit lighter. I was impressed at how many keys they have on the cash register to note these special requests (keep these tips in mind when ordering at your local Asian restaurant, too):
  • Request "stock velvet" instead of "oil" (meaning that they will cook the meat without all that oil - no wonder the meat is somewhat "crispy")
  • Request "light on the oil" so they will use less oil when stirfrying the dish
  • Request "light sauce"...Pei Wei dishes have more sauce than other Asian restaurants
  • All dishes are prepared with your choice of meat - and a fairly large portion of meat. Request more vegetables by asking for "tofu and vegetables", "chicken and vegetables" or "beef and vegetables" instead.
  • Ask for brown rice instead of white rice (even when restaurants serve "fried" rice as the standard or even on the buffet, they will always have "steamed" rice in the back...so ask)
