 QUESADILLAS

If you've ever ordered a quesadilla in a restaurant you know two things are certain. Number one, they're huge. Number two, they're typically loaded with cheese, sour cream, and if you're lucky, guacamole. 
They're ridiculously 
high in fat, yet for some reason people often order them as a "light" meal.
 
Here's my favorite speedy, home-made version. It's low in fat, high in fiber, and unbelievably food budget friendly.
 
1. Spray one side of a corn tortilla with spray oil. Place the tortilla, oil side down, on a hot skillet (preferably cast iron.)
2. Spread 1/3 cup canned vegetarian refried beans on top of the tortilla.
3. Sprinkle 2 tablespoons reduced fat cheddar or monterey jack cheese on top of the beans.
4. Place a second corn tortilla on top of the cheese, and lightly spray with the oil. 
5. Heat for 5 minutes, then expertly flip the entire thing over (like a pancake.) Heat for another 3-5 minutes, or until the filling is warm, the tortilla is crispy, and the cheese is melty.
6. Top with salsa and enjoy!

homemade power bars.

I'm sure you're familliar with the concept of the Summer Concert Series or Summer Lecture Series; you may even have attended a few.
 
In the spirit of getting out and about while the weather cooperates, I'm excited to offer the Summer Nutrition Series!
 
If you live in the Glen Ellyn area, please join us for one or all of the terrific programs that we have scheduled. If you don't live in the Glen Ellyn area, not to worry; webinars are in the works for the fall/winter season.

July 8: Build A Meal: Learn To Create A Nutritious, Delicious Plate
July 15: Shoestring Dining: Tasty Meals On A Tiny Budget
July 22: Weights & Plates: The Fitness And Food Connection
 
* Each program is 1 hour in length. 
* "Shoestring Dining" will feature a recipe demo and tasting.
* You'll recieve take-home materials for each program.
* Each attendee will recieve a $5.00 savings coupon for an initial  nutrition visit with me at my NutriFit office.
* We'll hold a weekly raffle of nutrition and fitness prizes.
* NutriTips booklets will be available for purchase.
