Aloha,
It's down to the wire, Thanksgiving is Thursday. Our house is full with family visiting from the East Coast. I am thinking about THE DINNER ... wanting some new flavors this year.

I'm thinking about a fresh pineapple pie recipe that was sent to us, I've never had pineapple pie, and of course this is Hawai`i.

I am also going to make Tropical Cranberry Rum Chutney from Dahlia Haas, the link is below.

From all of us, we wish you and your families, peace and joy this Thanksgiving Day, as we have much to be thankful for living in these Hawaiian Islands.

Fresh Pineapple Pie

Ingredients:

Pastry for 2 crust pie
1 medium to large pineapple (I prefer low acid Maui Gold pineapple)
2 eggs, slightly beaten
1 cup cane sugar
2 tablespoons cornstarch
1 tablespoon grated lime zest
3 tablespoon passion fruit pulp
1/8-teaspoon salt

Directions:

Cut peeled and cored pineapple in bite-size chunks.  Place eggs in bowl and beat in sugar, cornstarch, lime zest, passion fruit puree and salt.  Add pineapple chunks to wet mixture.

Turn into pastry lined 9" pie pan.  Adjust top crust; flute edges and cut vents.  I like to use the extra pastry dough and make a pineapple cut out on top of the crust.  Brush top of pie with egg wash.

Bake in 425 oven approximately 45 minutes. 

I check this pie about ½ way through to assure my edges aren't too brown.  If so, I make a foil collar and cover the edges for the rest of the bake time.
