POI-COCONUT COOKIES FEATURED IN OUR ISSUE #2
1 cup poi 3/4 cup sugar 3/4 cup butter 1 egg 1 tsp. vanilla 1 1/2 cup whole wheat flour 2 1/4 tsp. baking powder 1/2 tsp salt 3/4 cup shredded or flaked coconut
Heat oven 400 degrees, mix first 5 ingredients. Combine dry ingredients, stir in poi mixture. Stir in coconut. Drop by teaspoonfuls onto lightly greased cookie sheet. Bake for 15 min. Remove from cookie sheet immediately. Let cool.
