We thought it would be fun to offer up an exotic way to prepare your Thanksgiving turkey this year. Muriel Miura writes, "Entertaining Hawaiian-style means putting the emphasis on informality, friendliness, and fun. All you need is a tropical ambience with flowers and greenery, sweet Hawaiian music playing softly, and delicious. exotic things to eat."
Kalua Turkey
12 lb turkey 12 ti leaves, washed and rib removed 1 banana leaf washed and rib removed 1/4 cup Hawaiian rock salt 2 tsp. liquid smoke 1/4 cup canola oil
Line large baking pan with foil; line bottom with ti leaves and half of banana leaves. Rub inside and outside of the turkey with salt and liquid smoke; rub outside with canola oil. Place remaining half of banana leaf over turkey. Crimp foil around turkey and cover pan lightly with additional foil. Roast 375 degrees F. 6 hours. To serve, shred turkey, adding pan liquid to moisten meat.
