from "Jean Hee's Best Of The Best, Hawai`i Recipes"
to be released November 6th, 2007
Cashew Chicken

1-1/2 pounds boneless chicken, cut into 1-inch cubes
1 cup cashews
3 stalks celery, cut into 1-inch cubes
2 carrots, cut into 1/2-inch cubes, microwave 2 minutes
1 green pepper, cut into 1-inch cubes
1 onion, cut into 1-inch cubes
oil for frying

Seasoning:
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon pepper
1 Tablespoon sesame oil
1 Tablespoon oil
1 egg white

Combine seasoning ingredients; marinate chicken with seasoning and refrigerate for 2 hours. Heat oil in skillet and brown chicken. Remove chicken. Stir-fry vegetables until crisp tender; add chicken and cashews. Toss together

4-6 servings
