Cuyahoga Valley National Park is the partner for our Saturday morning market at its new Howe Meadow location.  Established in 1974 as a National Recreation Area, the park received National Park status in 2000.  Cuyahoga Valley National Park is also Countryside Conservancy's partner for the Countryside Initiative program, which offers long-term leases of farms within the National Park boundaries.

Dear Market Supporter,
 

I say it every year, but Thanksgiving is my favorite holiday.  For me, it's really the ultimate celebration of the work about which I am so passionate.  I love to cook, especially big meals for many people.  And this is my favorite excuse.  This year, however, we'll be spending a more intimate Thanksgiving with my immediate family and my dad.  Which means lots of leftovers to get excited about!  Sage shares some tips below on how to make this Thanksgiving more waste-wise, while the vendor's at this Saturday's market will be providing everything we need to make it remarkably delicious!     

 

I'm excited to announce an additional winter market date!  Please add December 10th to your calendar, and plan to join us for another Countryside Winter Farmers' Market that morning.

Market Happenings

We are giving thanks for many things this week!  We are thrilled to announce that we are the recipients of grant support from the Wholesome Wave Foundation!!  They are providing funds for us to match EBT purchases dollar-for-dollar (up to $20) beginning this weekend, and continuing through 2012. This program, called "Countryside Carrot Cash" provides funds for Ohio Direction Card holders to purchase fruits and vegetables at any of our farmers' markets.  We are so grateful.

We are also giving thanks for the wonderful musical talents of Bobby and Jan Patetta, who will be joining us in the cafeteria this week.  Stop by and stay for a spell, grab a bite to eat and enjoy their wonderful tunes.

 Get the Most Out of Your Thanksgiving Meal
 
With Thanksgiving just around the corner (8 days)... I thought it appropriate to share simple ways to reduce waste in the kitchen while preparing your holiday meals. These are simple tips I picked up from chefs while I was interning at Zona Spray's Cooking School in Hudson. These tips are simple but they're ones I still use in the kitchen today. Zona's philosophy was nothing -  and I mean nothing - went to waste. I was taught the importance of maximizing every item purchased for the kitchen: finding ways to get in the hard--to-reach corners of the honey mustard jar to use in dressing; making sure every potato peel, carrot top and vegetable end made it into the stock pot to squeeze out every ounce of usefulness before it made its way to the trash bin.

 

TIP 1: With mayonnaise, mustard, ketchup, honey and jam jars just add a little water, shake rattle and roll to add to dressing, salads and sauces. My mom always added a little milk to the mayonnaise jar to use in cole slaw.

 

TIP 2: Create a kitchen stock pot. This was my job each morning when I opened the kitchen at Zona's.  I would fill the pot with water so the when the chefs and I were preparing the day's menu we could add all the scraps, peels and ends to the pot as we worked. Why not start your own stock pot this Thanksgiving using all the discarded potato peels, onion/garlic skins, celery & carrot tops, and turkey bones? It will make the best stock you've ever tasted, and you can freeze what isn't used.  

 

TIP 3: Make a list before you go to the farmers' market - Buy only what you absolutely need and prepare only what your family will actually enjoy.  Freeze your leftovers for a cold winter's night when you can't curb your craving for sweet potato casserole, chestnut stuffing or roasted turkey.

Waste Not Tips on TV:  

 

If you haven't seen the OWN networks Super Soul Sunday it's worth a look. Last Sunday 11/6/11 OWN aired the short film No Impact Man. Premise: A New York City family (The Beavan's) troubled by the inordinate amount of waste created in the United States everyday decides to take a year long sabbatical from trash in the hopes of finding an answer to this unreasonable problem. The Beavan's start their journey by first buying locally (within 250 miles of NYC), home composting, then eliminating household waste, and finally eliminating electricity. Although extreme, the Beavan's reveal steps we can all take to reduce our waste little by little while reconnecting with our family, friends and Earth.
