About our Market Partners
Cuyahoga Valley National Park is the partner for our Saturday morning market at its new Howe Meadow location. Established in 1974 as a National Recreation Area, the park received National Park status in 2000. Cuyahoga Valley National Park is also Countryside Conservancy's partner for the Countryside Initiative program, which offers long-term leases of farms within the National Park boundaries. | Dear Market Supporter,
I haven't canned much the past couple of years, sticking primarily to freezing, with only the odd jar of jam making it to the pantry for the winter. But this year I find myself itching to stock my shelves with glistening jars of pickles, sauces and such. I taught myself to can back in 1999 or 2000, using the Ball Blue Book and crossing my fingers that it all would work out. Except for the one year I tried a different method and all but one of the 30 or so jars of tomato sauce ended up all over our clothes (we had one walk-in closet that acted as pantry, closet and general storage), I have been pretty successful. I'll still do a fair bit of freezing- it's quick and easy - but canning is rewarding not only for the joy of extending the season but for the beauty of the end product. Canning is experiencing a bit of a renaissance these days, too. There's a Canning Across America group (their photos are a treat!) and there are a number of books out now (too many to list!) that have different flavor profiles than what is taught in the Ball Blue Book. Many of the books provide directions for doing it in smaller batches, so you don't have to make it a big production unless you want to do so. If you're curious about how to get started, Basket of Life Farm (one of our Countryside Initiative Farms) is hosting a workshop this weekend. Saturday's market will feature local food enthusiast Carla Owens in the market kitchen. Stop by to taste the flavors of the market! And don't forget to show a little love for our volunteer musicians, Pat and Mary White, as they fill the meadow with original and traditional Celtic songs.

Flank Steak Salad with Chimichurri Dressing

6 servings
1 large bunch fresh parsley**
2 tablespoons fresh oregano leaves**
3 garlic cloves, peeled
1/2 cup olive oil
1/4 cup red wine vinegar
1 teaspoon chipotle hot pepper sauce
1 1/2 pounds flank steak**
8 ounces salad greens**
10 ounces chevre**
Prepare barbecue (medium-high heat). Combine parsley (with stems), oregano, and garlic in processor; blend 10 seconds. Add 1/2 cup oil, vinegar, and hot pepper sauce; blend until almost smooth. Season dressing to taste with salt and pepper.
Brush grill rack with oil. Sprinkle steak on both sides with salt and pepper. Grill steak to desired doneness, about 5 minutes per side for medium-rare. Transfer steak to work surface; let rest 5 minutes.
Meanwhile, toss greens in large bowl with some dressing. Transfer to large platter. Dot chevre over greens.
Thinly slice steak across grain on slight diagonal. Arrange steak atop greens. Drizzle with remaining dressing. |

| Dog Policy

While we love our four-legged friends, dogs are not permitted at the Countryside Farmers' Markets. They are, however, permitted to play at Howe Meadow, walk on the towpath or elsewhere in the Cuyahoga Valley National Park, but must remain on a leash at all times. |
