About our Market Partners
Cuyahoga Valley National Park is the partner for our Saturday morning market at its new Howe Meadow location. Established in 1974 as a National Recreation Area, the park received National Park status in 2000. Cuyahoga Valley National Park is also Countryside Conservancy's partner for the Countryside Initiative program, which offers long-term leases of farms within the National Park boundaries. | Dear Market Supporter,
After such a long & dreary winter, followed by never-ending rains in spring, we are glad that some dry weather is here to welcome us to our new location at Highland Square tonight. The City of AKron and the Highland Square Neighborhood Association have been critical to helping us secure this great new venue. While it isn't in our typical park or park-like setting, we couldn't be more excited about our urban, neighborhood-based location. In addition to our wonderful array of vendors, there are numerous independent shops in the area, so be sure to show your support for all the locals!
This week's warm (okay, hot) and dry weather means that many of our farmers are trying to play catch-up with planting (and weeding!) Many farmers I have talked with say their fields take at least two to three full days to dry out in order to get into them with their tractors to prepare their beds for transplanting or direct seeding. All of these weather challenges certainly mean that crops are delayed, and fewer farmers are filling their stands to over-flowing unless they have hoop houses in which to plant. We hope you will continue to show your support to our local farmers during this season that is presenting them with unprecedented challenges, and are able to understand why some of the most anticipated items are behind schedule (strawberries, anyone?) We certainly hope that the challenges are well behind us this season- and if you're itching to volunteer on a farm, this may just be the week to pitch in and help them make some headway on their to-do list.

Spring Bulgar Salad

By popular demand, here is the recipe from last week's Saturday market demo!
** Denotes an ingredient available at the market!
1 lb. bulgar wheat
salt and pepper
1 lb. beets**
1 lb. kohlrabi**
1/4 lb. leeks
1/2 lb. asparagus**
1/4 cup chopped parsley**
4 cups beet greens**
3/4 cup olive oil (some for grilling and some for dressing)
1/4 cup rice wine vinegar
Preheat oven to 400 F.
Cook the bulgar according to package and let cool.
Start the beets by tossing them with some olive oil and salt. Then wrap them in foil and place in oven for about 30 minutes or until just tender. Let them cool enough to handle and peel the beets by rubbing the skins off with fingers.
Slice leeks and kohlrabi. Toss the kohlrabi, leeks, and asparagus with olive oil and salt and pepper. Grill them until just marked (about 2-3 minutes). Let cool.
Chop all the vegetables and toss with the bulgar, vinegar and a bit more olive oil. Season with salt and pepper.
Try using quinoa instead of bulgar and be sure to try different veggies as they come into season. Enjoy the Ohio bounty!

| Dog Policy

While we love our four-legged friends, dogs are not permitted at the Countryside Farmers' Markets. They are, however, permitted to play at Howe Meadow, walk on the towpath or elsewhere in the Cuyahoga Valley National Park, but must remain on a leash at all times. |
