Swarthmore Fun Run - Wednesday |
37 runners and walkers were out last night at the Swarthmore Fun Run. 15 people came out to Swarthmore Pizza afterwards for good food and laughs. Come on out and join in the fun. All abilities are welcome. |
Lehigh Valley and Broad Street Runners |
Good luck and well wishes to all of those running Lehigh Half and Broad street this week. Or any other race for that matter. Numerous club members are heading to the Lehigh Valley on Sat for Sunday's race. Enjoy your pasta dinners and not too many beers before the race though it is hard to define too many. :) |

Spring Risotto
Serves 4-6 as a main dish, 8 as a first course
1 pound of asparagus, trimmed and cut into one-inch lengths 2 tablespoons olive oil 1 leek, quartered lengthwise, rinsed thoroughly to remove grit, and sliced 1 1/2 cups risotto rice 1/2 cup dry white wine 1 1/2 quarts chicken broth 1 cup fresh or frozen green peas 1 1/2 cups grated Parmesan cheese, plus a little extra for garnish. 2 tablespoons butter Salt and ground black pepper
Place asparagus, ˝ cup water and a generous sprinkle of salt into a large Dutch oven or soup kettle. Cover, turn the burner on high and bring to a boil. Continue to cook until asparagus is crisp tender, 3 to 5 minutes. Drain and then spread asparagus on a paper towel to cool quickly
Return pot to stove and heat oil over medium heat. Add leeks; sauté until tender, about 5 minutes. Stir in rice to coat with oil; add wine and simmer until almost evaporated. Add 1 cup of stock, stirring pretty constantly an allowing rice to absorb it before adding the next cup Continue adding stock and stirring until rice is almost cooked with a little chew at the center and liquid is creamy. Stir in asparagus and peas; cook until heated through. Stir in cheese and butter. Adjust seasonings, including salt and pepper to taste, Serve immediately, sprinkling with additional cheese and a few grinds of pepper.

Neil Weygandt, a 64-year-old Upper Darby native, is featured among the "Faces in the Crowd" in this week's Sports Illustrated after completing his 45th consecutive Boston Marathon in 5 hours, 52.14 seconds. Weygandt, who ran cross-country at Widener (formerly PMC College), is now a Boston resident. His personal best of 2 hours, 36 minutes, 51 seconds came in 1983.

Weygandt, 64, completed his 45th straight Boston Marathon (5:52:14) to continue his streak of running the most consecutive marathons in one city. His first Boston finish came in 1967, before the other modern major marathons-Berlin, Chicago, London and New York City-existed. Book Club |
The next Book Club meeting will be at June 4th. Location and time still to be determined.
The next book is The Art of Racing In the Rain by Garth Stein.

Enzo knows he is different from other dogs: a philosopher with a nearly human soul (and an obsession with opposable thumbs), he has educated himself by watching television extensively, and by listening very closely to the words of his master, Denny Swift, an up-and-coming race car driver. Through Denny, Enzo has gained tremendous insight into the human condition, and he sees that life, like racing, isn't simply about going fast. Using the techniques needed on the race track, one can successfully navigate all of life's ordeals.
On the eve of his death, Enzo takes stock of his life, recalling all that he and his family have been through: the sacrifices Denny has made to succeed professionally; the unexpected loss of Eve, Denny's wife; the three-year battle over their daughter, Zoë, whose maternal grandparents pulled every string to gain custody. In the end, despite what he sees as his own limitations, Enzo comes through heroically to preserve the Swift family, holding in his heart the dream that Denny will become a racing champion with Zoë at his side.
