Bowl/VegetablesHow to Cut Expenses and Grow Sales

Which approach do you suppose would cost the least-and-have the highest probability of filling a table at your restaurant today?

Finding, convincing, and motivating a total stranger who's never even heard of you? Or reaching out to a current customer who dines there on a regular basis?

Pretty obvious-right? Funny then, that chasing after the "new" customer with suicidal discounts... using expensive mass-media, that only generates temporary bursts of "junk traffic" - from low-end bargain hunters who only respond to the lowest price... has become the default marketing strategy of the restaurant industry... Let's look at two scenarios:

Use social media marketing to spread the word about your establishment

For restaurants, exposure to regular and prospective diners is critical to success and sustainability. Social media marketing is a great way to gain that much needed visibility at virtually no cost. The biggest hurdles for many restaurateurs are figuring out which social networks are right for them, getting started, and then maintaining their presence on a regular basis.

Picking the right social networks

With a seemingly endless array of social networks to choose from, it can be a little dizzying trying to determine which one, or combination, is right for your restaurant. Given their size, it's best to start the investigation with Facebook, Twitter, and LinkedIn.

Energy Efficiency in Restaurants

Going green and keeping energy costs down are two of the most popular changes that restaurant owners wish to achieve in their buildings. Any short-term costs involved in upgrading or replacing items in your restaurant are outweighed by the long-term benefits derived from making your restaurant green. Some simple things you can do that will not only help the environment, but also will save you money are:

1.       Turn down the A/C, or let it run on the "energy saving" setting.

2.       Recycle all appropriate products.

3.        Check your sinks, toilets, etc. for leaking water.

4.       Install flow restrictors on your sink faucets.

Selling Sustainability in Guest Interactions

In a May 2010 Technomicsurvey of 500 people, 78% said that if the restaurant in which they worked became a Certified Green Restaurant®, they would be more excited to work there, and 79% of consumers also said they would more likely patronize a Certified Green Restaurant® over one that was not.... but the claims need to be specific and transparent. So knowing that, how does a restaurant capitalize on the motivations of its workforce and translate that into meaningful guest interactions?

From the initial reservation call to the end of the dining experience, there are multiple opportunities to communicate your sustainable practices to guests. For many, the best time to get up close and personal about your restaurant's mission is during the spiel, the first 3-5 minutes a server or support staff member has with their guests. A spiel can be as complicated as a full menu tour or as short as a greeting and daily special. The content is up to restaurant policies and the habits of the server.
