Schenectady County Community College's culinary department is once again offering a gluten free buffet on April 9 from 6:30-9 at the College's Casola Dining room. The ticket price is $20 inclusive of all courses. I applaud their efforts to understand our disability. Let's support our future chefs' in their efforts. Any time I have dined at the college, I have always enjoyed the lovely presentation, excellent service and delightful palette. You must make reservations.

I took out of the main Albany Library, the new 2012 cookbook Deliciously G-Free, food so flavorful they'll never believe it's gluten-free. Author Elizabeth Hasselbeck, co-host on ABC's The View, comes from a well educated family, her father an architect and mother a teacher of science who then became a lawyer. Yet her Italian mother had difficulty understanding the dietary restrictions that her daughter must now be compliant. How could she not eat this lovely handmade pasta? So, sometimes Hasselbeck would appease her mother and eat the pizza or pasta, only to suffer for weeks later. The 266 page book has many color photos of her luscious looking creations. The book is a balance of the 3 meals plus appetizers, soups and desserts. She offers little asides containing helpful tips. Like 4 slices of GF bread will offer 2 cups of bread crumbs. She uses an ingredient in her brownies, I have not seen before, black bean flour. I do love the addition of bean flour to pasta or other items, so why not. But where or how to make it. Cook the beans first then dehydrate them? Then throw them into the blender or food mill? Maybe! Good source of protein and fiber. I googled and discovered a nice web site that suggested all kinds of tips using bean flours in GF cooking. Like using white bean flour to thicken a white sauce or creamy soup. The Journal of Clinical Endocrinology and Metabolism published a study done in Italy, that cases of autoimmune throiditis that require more then the usual dosage of thyroxine, may be because of atypical CD, where there is no overt gastro symptoms. These cases of undiagnosed CD, still had damage to the small intestine and thus were not absorbing the thyroxine. Dr. Marco Centanni of Paienza University in Rome, suggests that when "an individually-tailored dose does not reach therapeutic target" that this should be a "tool to unveil occult gastrointestinal disorders." I was pleased to see an article in a recent Medscape.com, an online medical committee newsletter, on gluten sensitivity as an emerging serious problem. Perhaps doctors won't be so quick to dismiss a patients' conviction of being adversely affected by gluten ingestion. Click here for complete article: Gluten Sensitivity

New Universal Gluten-free Symbol for European Food Packaging.....Celiac.com 02/06/2012 - Coeliac UK, Britain's leading celiac disease organization has finalized an agreement for all European countries to use a single universal gluten-free symbol on the front of all packaging for gluten-free products.
The overall goal is to establish the logo as the universal quality assurance symbol for gluten-free products

 

How Reliable is Hepatitis B Vaccination in People Celiac Disease? Celiac.com 02/10/2012 - The HBV vaccine is usually effective against common hepatitis B virus (HBV) infection, with just 4-10% of vaccine recipients failing to respond to standard immunization. Some studies suggest that people with celiac disease may have high levels of resistance to the HBV vaccine, compared to the general population.

You can read more about this at above website, but keep in mind that in the Albany area, there are many retailers, bakeries, cafes, health food stores and restaurants that make it possible to eat safely gluten free. Albany,NY will be on the map and in these articles someday.

Gluten sensitivity is the topic of a paper published recently in the Annals of Internal Medicine in which researchers acknowledged the seriousness of celiac disease, but also said part of the population could have nonceliac gluten sensitivity, characterized by having distinct symptoms such as diarrhea, abdominal pain, gas, bloating or headaches after eating foods containing gluten.

President's Budget Highlights Gluten Free Labeling Proposal. The FDA had previously issued a proposed rule in 2007 on gluten-free food labeling that used an analytical methods-based approach to propose less than 20 parts per million gluten as one of the criteria to define the term "gluten-free."  The Agency intends to issue, by the end of fiscal year 2012, a final rule that defines "glutenfree" for labeling food products.

A Sweden study published this year in Alimentary Pharmacology & Therapeutics, showed that celiacs have a 27% higher risk of urinary stones. There was no difference between men or women or their age of onset. 

 

A 2011 article published in this same journal, on a study done in Spain, showed a 5 fold increase of diagnosis of CD in children compared to adults. They are not sure why such a spike in incidence rates, perhaps environmental factors play a role. And the prevalence was predominantly among the females, consistent with prior studies done around the world. (As I mentioned in previous articles, the wheat grown today has been genetically modified to contain more gluten.) If you needed more evidence of the effects of cheating on the GF diet, a study published in Gastroenterology in Feb this year, will scare you back to compliance. Volunteers eat 1-3 grams a day for 12 weeks. To give yourself an idea of what one gram looks like, open up a 1000 mg. vitamin C caps and pour into your hand. I can't imagine going thru with 3 months of this experiment and as you can imagine there were many who dropped out due to gastro complaints. But of those who toughed it out for science, showed that low and moderate ingestion caused small intestine mucosal damage to 67% of participants, 22% who had no gastro-symptoms. Albany's New GF Beer!
Greetings, My name is Jeremy Hosier - I am co-owner of Steadfast Beer Co., a new Albany-based producer of Gluten-Free craft beer. Our flagship offering, Steadfast Sorghum Pale Ale just received its New York State Label Registration via the Liquor Authority; we're quite excited to finally bring our product to market!

Our beer is an American Pale Ale (some may call it an IPA because it's quite hoppy) brewed with sorghum and molasses. It's a hop-forward beer with a huge flavor profile. We like to call it the first "true Gluten-Free craft beer." We've had it tested by the Siebel Institute for gluten - the results came back at less than 10 parts per million.

Our beer will be on beverage center shelves in the Albany-Schenectady-Troy-Saratoga region within the coming weeks. After that, you'll be able to find our product in discerning beer bars as well as bars/restaurants that focus on Gluten-Free food.

Berkshire Support Group
The Celiac Disease & Gluten Intolerance Support Group of Berkshire County is a newly formed support group in Western Massachusetts. Monthly meetings are held at various locations throughout Berkshire County on the third Thursday of each month at 6:30 pm. The next meeting will be at the Berkshire Medical Center (725 North Street Pittsfield, MA) on April 19, 2012 at 6:30 pm. Celiac Fundraiser Walk - Mother's Day - Syracuse
See link below for University of Maryland Celiac Center, Making Tracks for Celiacs. There is a run/walk in Syracuse Mother's day weekend. There is also information about how to set up a walk. Seeing as it is March now, it is too late for this year. But, it might be possible to get a group together to take part in the Syracuse walk to see what it is like, etc. Syracuse will be collecting GF goods for a food pantry there and 10% of proceeds will go to GF families in Syracuse area who are in need.
