Greetings! | |
Here's hoping all's well your way. We have a busy year ahead and will be breaking new ground. In this regard, we will have our first Saturday Gluten Free Food Festival on June 18, and our first Friday meeting on September 30. As an open-community group, our mission is to reach out to all. These dates were selected in response to member suggestions. In the future we will endeavor to rotate the scheduling of meetings, including restaurant events, to also include Sundays and rotating weekdays.
An on-going challenge for TCDRI is active member support. Fortunately, we currently have dedicated Board Members who make our existence as a group a reality. As an all-volunteer and non-profit group, we have our limitations. First, it is not practical for us to constantly forward individual announcements to our email list. To preserve the integrity of the newsletter, it needs to be published on a limited schedule. Second, if vendors offer discount offers, longer expiration deadlines are needed to accommodate the newsletter publication schedule. I'm working with the vendors on this issue.
Finally, I wish to thank all of the members who have helped us to keep TCDRI as a functioning celiac disease resource for the capital district.

Notes: Seating for this event is limited to 20, so RSVP early! If we get more than 20 RSVPs, we'll have a waiting list in case of cancellations. Also, each attendee is financially responsible for their individual food & beverage orders.
The New World Bistro Bar serves their own style of Global Soul Food, the healthy, lustily seasoned and assertive dishes of the American Melting Pot. Many of their ingredients are regional, organic and sustainable and that list keeps growing! They use fresh local tomatoes in summer, dried in winter, fresh corn in summer, polenta in winter... Simple stuff, right? Their philosophy is that we "can all live better if we begin to expect restaurants to make great meals without encouraging chemists to invent indestructible foods." |

Study Supports Gluten-free Diet for 'Potential' Celiac Disease Patients:

Marriot Hotels: When traveling you may want to choose the Marriot Hotels. Either call or write in the comments line asking for gluten free food. We stopped in Fredericksburg, VA on our way down to NC and stayed at The Fairfield Inn. I had posted a question in the comments line when making my reservation as to whether or not they had gluten free food available for breakfast. Much to my surprise, they bought a box of Rice Chex cereal, a box of grits, and a box of crackers that were all gluten free. They were kept in the back room, so that others would not mix it up with their food. (you have to ask for it in the morning, if you request it ahead of time.) Please double check, but most of the eggs, bacon and sausage are gluten free. They have gluten free yogurt and fruit cups and peanut butter. I had a WONDERFUL breakfast.
Keep in mind to call or comment when making a reservation and request gluten free food. Also speak to the manager and nicely explain the importance of safe food for celiacs and how they can be the first line of hotels to offer gluten free food and drum up business at their hotels. Be kind if they make a mistake and explain the seriousness of celiac disease.
Food Allergy Guidelines from NIAID: Celiac.com 01/06/2011 - The National Institute for Allergy and Infectious Disease (NIAID) released its first ever list of guidelines for food allergies. Developed over two years by a panel of nineteen experts, the guidelines suggested avoiding the ingestion of specific allergens as the best strategy for managing allergies, but made no recommendations for medication.
The Subway restaurant chain: This popular chain s currently testing two gluten-free menu items in the Dallas and Tyler, Texas markets. The trial options roll out Jan. 10. According to celiac.com, the gluten-free rolls and brownies will come prepackaged and individually wrapped. Sandwich Artists in those two markets will be trained on how to cut the roll with a pre-wrapped knife for one use only. Also, to further avoid cross-contamination, that same Sandwich Artist will prepare the order from beginning to end, ensuring a 100-percent gluten-free meal. Theresa Hudda reports that the Fifth & Fifty Pizzeria & Deli in Scotia (279 N. Ballston Ave, ph: 372-4668) serves GF Pizza that is delicious! We recently brought a GF white pizza with spinach, tomato and mushroom from them to a pizza party that was every bit as good as the "regular" pizza (I think my husband actually preferred theirs but I was reluctant to part with it) - definitely worth trying.

Walgreens has recently lunched DR deLISH store brand of food and drink products. The Delish line contains many clearly-labeled gluten-free options, and is increasingly available in Walgreens Nationwide.
The Delish line ranges in price from $3-$7, and includes everything from bottles of seltzer to cookies to jars of salsa. I liked two of the gluten-free snacks, gluten-free Ginger Snaps, which have a solid gingery flavor to them and aren't too sweet, and gluten-free Animal Crackers, which reminded me more of butter cookies or a thin shortbread with a nice crispness to them. Tastewise, I could easily eat more of these than I care to admit. We gave them a dunk in some hot chocolate. These items are available at the Walgreens on the corner on Central Ave and Rt 155 near the Kmart in Colonie. Each were about $2.49.

Post has introduced a 90 Calorie Fruity & Cocoa Pebbles Marshmallow Treat. And, Post Fruity, Cocoa Pebbles & Marshmallow Pebbles are now being labeled "gluten-free" on the box.
Here is a Trail Mix Bar recipe courtesy of Post Recipes on the Post website using Cocoa Pebbles:
1/2 cup (1 stick) butter or margarine; 3/4 cup creamy peanut butter; 1 pkg. (10.5) miniature marshmallows; 5 cups Cocoa Pebbles Cereal; 2 cups peanuts; 2 cups raisins. Directions:
1. Microwave butter and peanut butter in large microwaveable bowl on medium high (70%) 1-1/2 min. or until butter is melted; stir until well blended.
2. Add marshmallows; toss to coat. Microwave an additional 1-1/2 min. or until marshmallows are completely melted and mixture is well blended, stirring after 45 sec.
3. Add remaining ingredients; mix well.
4. Press cereal mixture firmly into lightly greased 15x10x1-inch pan.
5. Refrigerate 1 hour or until firm.
6. Cut into 32 bars to serve. |

Reviews - Karavalli's Regional Cuisine of India on January 25, 2011 | |
TCDRI held its January celiac dinner get-together at the Karavalli Regional Cuisine of India restaurant on Tuesday, January 25th. A total of 23 members and their families braved the cold to travel to Latham and sample a wide variety of Indian food. The group ordered a number of different dishes from the menu; since the food is served family-style in bowls, everyone shared their dishes with others at the table. The meals were expertly prepared, and some were very imaginative (Roz Spiller's whole fish was quite interesting). Members and their guests enjoyed great conversation and a wonderful meal. Thanks to all who attended!

To add to John's notes, I would also like to say that we had a delightful time at Karavalli's and welcomed several newly diagnosed attendees. The restaurant staff were very attentive. For my part (besides a whole red snapper), I discovered Karavalli - Latham's delicious KURKURI BHINDI (CRISPY OKRA) Spiced crispy Okra with Chat masala, lime and fresh cilantro. Mail Bag - Bread Machine Recipe | A request came in for bread machine recipe. I searched back through the emails, and found this answer to an inquiry from Daria, which may be helpful:
Dear Daria, Thank you for your email. Given the nature of gluten-free mixing requirements, bread machines are not ideal. I have heard back from many bakers that a vertical style machine is preferred. The Breadman Ultimate, with gluten-free cycle seems to be a favorite. For a horizontal 2 paddle machine, a custom program is beneficial. We have worked out these modifications: The simplest way: 1) Add 1 teaspoon of baking powder to the mix 2) Program then use the following "homemade" cycle: preheat 15", knead 30", rise 65", bake 70", dark crust setting. 3) Remove bread, cool, slice, eat, and freeze leftover slices. The best way - a prettier and somewhat lighter loaf: 1) Add 1 teaspoon of baking powder to the mix 2) Program two homemade cycles a) preheat 15", knead 30", b) knead 30", rise 65", bake 70", dark crust setting. 3) Run the first homemade cycle (a). 4) Though it's more of an aesthetic than a taste issue, we recommend scraping unincorporated flour into the batter after this first kneading cycle. If not scraped into the mix, the small amount of unincorporated flour forms a narrow, powdery ring around the loaf. 5) Start the second cycle (b) right after you finish scraping. 6) After all the kneading is done for the second cycle (30"), open the lid and use a spatula to smooth the top of the batter into a traditional domed loaf shape. Close the lid and allow the cycle to finish. 7) Remove bread, cool, slice, eat, and freeze leftover slices. We hope you have satisfactory results. NYC Gluten-Free Restaurant Review - Nizza | |
On Saturday January 22nd, Herb and I went down to NYC for the Motorcycle Show at the Javitz Center. I looked online for Gluten Free Dining. Nizza being close to the Javitz Center sounded good .. IT WAS A GREAT CHOICE. We walked to 630 9th Ave (between 44th &45th Streets). Nizza was very comfortable, a very nice place. We went early, at 3:45, for dinner. Our waiter was very informative about the diet. He suggested a very nice wine from Italy. We started off with breadsticks (dipped in oil) I could have (NO DAIRY)!! Was crunchy, very good.. Next, their specialty is their Socca (chickpea pancake). I ordered the simple version (came with a red sauce) as our appetizer. A very thin pancake. SO SO GOOD... Then our waiter suggested Sunday Pasta (cheese on the side: so I could try some) and Ziti Pomodora (I got Goat cheese on the side). Everything was so good. We will go back .... Charlene and Herb
