Introducing 7SYSTEMS 2011 Pro Team which sees all the 2010 Team members returning plus the addition of several new amazing Canadian athletes.

 

New Team Members 

 

Max Plaxton may currently be Canada's top male mountain biker and will likely be on the team for London 2012.  Max is a professional mountain biker, 5 time National Champion and 2 time World Relay Champion. He currently is one of four team members in USA factory team Specialized/Sho-air which is a professional cross-country mountain bike team. Annamay Pierse is a member of Canada's national swim team and the current world record holder for the women's 200m breaststroke.  Annamay was a member of the Canadian Olympic team in Bejing in 2008 and is currently preparing for London in 2012.  Annamay has a great story and we will be featuring it in coming issues. 

 

Others.  We will be announcing the addition of another 2-3 Olympic level athletes to the Pro Team in the coming weeks.  Watch for it.

Nutrition Tip - Max Plaxton's BBQ Halibut

 

This month's recipe comes from Max Plaxton. It is a simple, delicious and healthy BBQ halibut recipe...enjoy!

 

Ingredients 

Halibut picture
  • 1 nice looking piece of fresh halibut, skin on          
  • 1 Mango 
  • Cilantro
  • Lime juice, preferably key limes
  • Balsamic vinegar
  • Maple syrup
  • 2 large yams
  • 10-15 asparagus
  • Small handful of pine nuts
  • Sea salt and coarse pepper
Fish can be done in the oven if you don't have a BBQ available.
 
Steps
  • Turn on the BBQ to medium heat. The halibut should only take around 10-15 minutes with skin down. No need to flip
  • Chop up Mango into small pieces, mince cilantro and mix in a bowl with fresh lime juice
  • Boil a pot of water. Peel the yams and chop them into small chunks. Boil them until they are soft and mash with Olive oil
  • Wash asparagus and chop off an inch from the bottoms
  • Drizzle asparagus with olive oil, balsamic vinegar, maple syrup, sea salt and coarse pepper. 
  • After the fish has been on the BBQ for about 10 minutes, cook asparagus on the top shelf. Be careful not to over cook! 
  • In a frying pan, on medium heat, toast pine nuts with a little butter and brown sugar until they are done to your liking.
Once the fish is done to your liking, pull off the grill and top with mango salsa and pine nuts. Accompany on a plate with the grilled asparagus and mashed yams. Some freshly cracked salt and pepper will go really well with everything.

A white wine will go really well with this meal. My personal favourite with halibut is Oyster Bay Sauvignon Blanc or the Kettle Valley Chardonnay.

Ray Zayhab's Altacama Extreme Expedition

 

Ray Zahab has been an ultra-marathon runner since 2004. He made history in 2007 by running 7500 km across the entire Sahara Desert to raise awareness for clean-water initiatives in Africa. That translates into 70km for 111 days in extreme desert conditions through six countries. Ray went on to found Impossible2possible.  It is a non-profit organization that uses adventures that inspire and educate youth to protect this fragile planet and its people. Ray's most recent expedition took him to the Atacama desert. It started near the Peruvian border and 1200 kms later ended in the province of Copiapo. With camping gear on his back, Ray ran 60 km a day over 20 days. Through videoconferencing Ray communicated with students everywhere who were involved in i2P's Experiential Learning Programs.  As always, Ray used 7SYSTEMS throughout his run to ensure he had the micro-nutrients he needed to get him to Copiapo.
