Many of us spend much of our time frustrated, angry, and/or depressed for reasons we can't seem to pin down or for reasons we feel are out of our control.  But, the truth is that we can grow strong like the mighty oak and shine bright like the brilliant diamond when we embrace life lessons that may come our way each day.  These experiences, though at the time may seem more annoying than significant, will make us wiser and may very well serve us tomorrow.

Happiness is truly a state of mind, so begin your day within a vibration that will serve you.  Dr. Wayne Dyer teaches a simple and effective daily ritual, which we can all practice each morning to ground ourselves and set in motion a ripple effect of positivity in our lives.  It's a very easy technique and you may ask how such a simple act could possibly shift the day to going your way, but it can and it will do the job!  Here's how it works...

Each morning when you first wake up, sit up in your bed and place your feet on the floor.  With your eyes closed, take a deep cleansing breath through you nose, then exhale fully out of your mouth.  Then, with purpose and meaning say OUTLOUD, "Thank you, thank you, thank you!" to start your day in a healthy vibration or "attitude of gratitude".  You will be amazed when life does throw you a monkey wrench, just how prepared you will be to approach any difficulty from a healthy "thank you based" perspective. 

On a physiological level, beginning the day with a protein-rich, healthy fat based breakfast will stabilize your blood sugar levels and provide you with long burning energy and an even mood.  Try scrambling some eggs in organic coconut oil along with a half of an avocado and a half cup serving of Immunitrition's delicious cultured vegetables.  Sprinkle everything with a natural sea salt to taste and enjoy.

Nutritionally Speaking: Nutrient-Rich Herbal Infusions

I often enjoy a cup of tea while at work, reading, or as a dessert. My favorite these days is a blend of holy basil, chamomile and rose essence which is flavorful, aromatic, and soothing. Herbal teas, which are steeped for 2-5 minutes offer us many benefits. They are colorful, and tasty and may contain various plant (phyto)chemicals that promote health and longevity.

As a Nutritional Therapist I am always looking for the nutritional value of what I eat and drink. I have found that herbal infusions are the most nutritious form of tea. As opposed to a tea which is steeped for 2-5 minutes, an infusion is steeped for at least four hours and in my case overnight. Since the minerals and other nutrients are made more accessible by drying, dried herbs are the best choice.

Minerals, which support the health of our bones and tissues, make up 4% of our bodies. Minerals are classified as Macro minerals (large), such as calcium, magnesium, and Micro minerals (small), including iron and chromium. These and other minerals act as cofactors for enzyme reaction, help maintain our pH, and support healthy nerve conduction. Since our bodies cannot produce these important minerals we must have them in our foods. Unfortunately much of the soil used to grow our vegetables on an industrial level is depleted of minerals, and if the minerals are not in the soil they will not be in our food. Herbal infusions are a great way to supplement the minerals in your diet. Are you experiencing leg cramps at night, or not getting as much out of your workout as you'd like? Drink nutritious herbal infusions throughout the day, and you will feel more energy and vitality.

One of my favorite nutritious herbs is mineral rich stinging nettles (Urtica dioica). According to herbalist Susun Weed, an overnight infusion of nettles will yield 500mg. of calcium per cup. She found that if you steep the nettles for 2-5 minutes, you only end up with 5-10mg. of calcium per cup. Nettles are also a source of iron, and silicon which supports healthier skin and hair.

I make my infusions at night before I go to sleep. I use one quart mason jars, in which I will put 2-4 tablespoons or more of dried herb, fill to the top with boiling water, then close tightly and let sit overnight. In the morning I strain the infusion, squeezing the liquid out of the plant, and then enjoy throughout the day.

Any herbs that do not contain many volatile oils, resins, or alkaloids are good choices for nutritious infusions. Three of my favorites are nettles, oatstraw, and red clover. Nettles are rich in minerals, and helps nourish the adrenals, kidneys, blood vessels, skin, and hair. Oatstraw (Avena sativa) is a great longevity tonic, and supports the nervous system. Red Clover (Trifolium pretense) blossoms are a great blood purifier, increase blood flow, and contain isoflavones that help improve your "good" cholesterol.

Infusions generally taste great! You can add honey or cream if you'd like, and I sometimes will add a small amount (tsp) of mint to my infusion mixture. As the weather gets warmer try some iced Red Clover infusion with a touch of mint. I do suggest you try the herbs one at a time to get to know them before blending.

Some other nutritious choices for infusion are: linden flower (Tillia americana), which has anti-flu properties, soothes the lungs and digestive system, and supports cardiovascular function, and comfrey leaf which supports healing of skin, bones, and mucus membranes.  A note about Comfrey: while the roots of wild comfrey, (Symphytum officionale) contain pyrrolizidine alkaloids, that can cause liver congestion, but the leaves of cultivated comfrey, (symphytum uplandia) are free of this constituent.

"PUMP IT UP"

This month's article is devoted to one of the most important, if not the most important muscle in the body...the heart.  Many of us fail to realize that like every other muscle, the heart must be nourished and exercised in order to be strong and healthy.  The way you treat your heart today will in great part determine your quality of life for years to come.

In order to stay healthy and functional, your heart and circulatory system need regular exercise.  Lack of exercise and a sedentary lifestyle degrade the quality of the circulatory system, weaken the heart and lungs, and lead to the overall decay of physical health.   One of the best ways to prevent this decay is through cardiovascular conditioning.
 
Simply stated, cardiovascular exercise is any activity that raises and holds the heart rate up while increasing blood circulation.  In order to achieve the greatest benefits, most fitness professionals agree that your target heart rate (THR) needs to be at 70 to 80 percent (50-60% for seniors) of maximum heart rate (MHR) for a period of 20 minutes or greater.  The simple formula for calculating THR is 220 minus your age which equals your MHR.  You then multiply MHR by .7 or .8 to get your THR.  For example, if you are 40 years old, your MHR would be 180bpm (220-40).  To calculate your target heart rate, multiply 180 by .7 and .8, giving you a THR between 126bpm and 144bpm.  You will notice that in the beginning stages of cardiovascular conditioning, not much intensity will be required to achieve your THR.  However, as your heart health improves, you will need to increase your intensity or duration of activity to achieve similar results.   It is important to note, you should always consult with your physician before beginning any type of fitness program.   Also, don't forget your 8-10 minute warm up, 5-10 minute cool down and hydration, all very important steps when exercising!

"So what's in it for me?" you might ask.  The most obvious answer and the number one reason people engage in cardio fitness is weight loss and fat reduction.  However, what many of them don't realize is that they are reaping a myriad of other benefits which are vital to health.  Some of these tremendous benefits include increased lung function, increased production of endorphins which give us feelings of happiness and well-being, better utilization of oxygen throughout the body, increased metabolism, increased bone and muscle mass, improved ability to recover from injury or illness, increased ability of the muscles to utilize glucose which is key in managing diabetes, decreased risk of heart disease, lower blood pressure and cholesterol, and stress reduction.  All of this for 20 minutes at your THR three to five times a week.  Well worth it in my book!

So whether by walking, biking, swimming or hiking, pump it up!  Choose activities you find fun, that you can do with your family or friends, and make time!  Your heart will thank you!

Another health tip
: As soon as you feel flu-like symptoms coming on, immediately fill each ear with hydrogen peroxide.  Here's the process: Lay down on your bed without placing a pillow under your head.  Lay on your side and fill a dropper with peroxide solution and fill the first ear fully.  Lay there and allow the peroxide to bubble inside your ear.  The bubbling sound may seem loud at first, but hang in there for at least 5 minutes per ear and let the peroxide do its work.  You may be surprised to hear a lot of bubbling in one ear and very little in the other.  After 5 minutes, place a towel or napkin over the dosed ear and sit up and tilt your head sideways to allow the peroxide to gently drain from the ear.  Repeat the same process for your other ear.  Long-term studies in Russia have shown that when families perform this peroxide process once per week during cold and flu season, that there was a 60% DECREASE in cold and flu and a 40% decrease in symptoms and length of illness in those who had already been infected!

Ingredients

- 3 1/2 lbs. organic (grass-fed is best) lamb shoulder roast - cut into 2 inch pieces
- 6 cloves organic garlic - crushed and peeled
- 1/2 cup dry organic, sulfite-free white wine
- 1/2 cup fresh organic sage leaves
- 1 tablespoon extra-virgin organic olive oil
- 1 tablespoon organic virgin coconut oil
- 1 large onion - peeled and chopped
- Salt and freshly ground organic pepper
- 2 teaspoons organic sweet paprika
- 3 pieces organic roasted yellow bell peppers from a jar or freshly prepared - cut into 1/2 inch strips
- 1 large ripe organic tomato - peeled, seeded, and chopped
- 4-6 sprigs organic parsley - chopped
- 1 organic bay leaf
- 1/2 cup dry, full-bodied, organic, sulfite-free red wine
- 1/2 cup organic chicken broth

Preparation

Combine lamb, 3 garlic cloves, sage, and white wine in a medium bowl. Let marinate for 2-3 hours. Drain the meat, discard the marinade, and pat dry with brown paper towels. Mince the remaining 3 garlic cloves and set aside.  Heat olive oil in a large, heavy-bottomed pan with lid, over medium-high heat. Working in batches, brown the meat on all sides, about 10 minutes per batch. Return all meat to the pot. Add onions, minced garlic, salt and pepper to taste, and cook, scraping browned bits stuck to the bottom of the pot with a wooden spoon, until the onions are soft, about 5 minutes. Stir in paprika, add roasted peppers, tomatoes, parsley, bay leaf, and red wine. Bring to a boil, reduce heat to medium, and simmer until juices in pot reduce and thicken slightly, about 10-15 minutes.  Add chicken stock, cover, reduce heat to low, and simmer, stirring occasionally, until meat is very tender, 2 to 2 1/2 hours. Adjust seasonings to taste.
