Sunray Venus Clam

 

It is believed the Caloosa Indians enjoyed Sunray Venus Clams hundreds of years ago as a staple in their regional cuisine. A native species found from waters off of South Carolina into the Florida Panhandle, Sunray Venus Clams (Macrocallista Nimbosa) have never before been commercialized or produced for distribution. During our research into these incredibly rare & stunningly beautiful clams, we've spoken with seasoned generational Florida Fishermen who recall coming across these delicacies, but were unable to find enough to be a reliable resource to offer into market. Whatever minimal catch came in was kept local & prized for the delicate sweet flavor, smooth glassy shells & remarkable meat fill.

 

Now, Supreme Lobster's new exclusive partnerships with Scientific Associates & Research Aquaculture Inc. of Stuart Florida will be bringing these unique animals into Chicago's culinary community.

 

Sustainable Raising & Harvesting of Sunray Venus

 

The Sunray Venus Clam starts it's life at Research Aquaculture Inc's inland hatchery in south eastern Florida where millions of baby Sunray Venus are raised in RAI's protective nursery facilities until the are ready for grow out. These patented Recirculating Aquaculture Systems allow for optimal control in the rearing of this somewhat temperamental & delicate species while ensuring no adverse impact on any natural bodies of water. All processes create a sustainable, environmentally friendly product that is antibiotic, additive and preservative free.


From here, the clam is transferred to beds along Pine Island Florida where it takes about one year to grow into their desired 2 1/2 inch market size. Each Sunray Venus Clam Harvest is Diver gathered, a completely hands on artisan technique that eliminates the use of dredges & rakes, further ensuring minimal environmental disturbance.  

 

Grow out of the Sunray Venus Clams takes place over eight acres of bottom in state approved waters. The Sunray Venus Clam is a particularly sensitive species, and requires a gentle touch. RAI's deep water leases take advantage of ocean mechanics to protect the clams from drastic environmental fluctuations. Sunray Venus Clam leases are "deep water"  compared to the Cedar Key and Virginia Clams on the market today. This deeper water allows for a water thermocline, which buffers the water temperatures and greatly reduces stress on the clams allowing them to develop a sweet flavor & outstanding meat fill that is approximately 50% greater than other Hard Shell Clams available today.
 

The shells of the Sunray Venus Clam are also unlike any other Hard Shell Clam with a smooth, polished & almost glassy appearance. Once cooked the shells transform, blooming into a striking coral coloring with the distinctive sun ray markings that offer a beautiful presentation.
