 Thanksgiving Day

In many American households, the Thanksgiving celebration has lost much of its original religious significance.  Now, the main focus is on cooking and sharing a large, delicious  meal with family and friends.  Turkey,  the Thanksgiving staple that has become all but synonymous with the holiday. 

Do we love this holiday for the right reasons?
Thanksgiving
In households all over the US, Thanksgiving is celebrated on the 4th Weekend in November.  The meaning of this holiday has changed since the Pilgrims celebrated this back in 1621.

Today, nearly 90 percent of Americans eat Turkey on this holiday-whether roasted, baked or deep-fried-on Thanksgiving, according to the National Turkey Federation. Other traditional foods include stuffing, mashed potatoes, cranberry sauce and pumpkin pie.

Parades have also become an integral part of the holiday in cities and towns across the United States. Presented by Macy's department store since 1924, New York City's Thanksgiving Day parade is the largest and most famous, attracting some 2 to 3 million spectators along its 2.5-mile route and drawing an enormous television audience.

We sit around the table with our loved ones to enjoy the meal and watch the parade.  But, do we stop and give thanks for all that has happened in our lives?  It used to be a time of thanks for the harvest and express gratitude.  We need to bring that back.  This year, take some time out with family and friends to appreciate them, the life you live, and everything that surrounds you.  Many around the world would appreciate 1/20th of what we have.  Take the family out to donate cans of food. 

Do something that will put a good feeling in your heart.  That's what this holiday is all about!cute dogs hugging

Summit Brewing Company

Summit Brewing Company, located in St. Paul, Minnesota was founded in 1986.  The founder, Mark O. Stutrud wanted to create a beer for one reason: to bring back the remarkable craft beers once brewed throughout the upper Midwest. 
 
Through many trials, errors, success, they sent out their first keg in September of 19'86.  The new beer quickly grew into a local favorite.  People really seemed to appreciate the superior quality of Summit's brews. To keep up with demand, the brewery had to grow from the building it was currently located in.
In 1993 alone, Summit Brewing Company tripled in size.

Now, here they are spreading their beers to surrounding states.  Go to your local stores to purchase their beer.

Prep Time: 10 min
Cook Time: 20 min


Servings: 6

Ingredients:

1/3 stick buttergreen bean casserole

1/2 cup diced onions

1/2 cup sliced fresh mushrooms

2 cups sliced green beans

2 1/2 cups chicken broth

1/2 cup Goose Island India Pale Ale

1 (10 oz) can cream of mushroom soup

1 (2.8 oz) can french-fried onion rings

Pinch of House Seasoning (recipe follows)

1 cup grated Cheddar


Directions:
Preheat an oven to 350 degrees.

Melt the butter in a large skillet.  Saute the onions and mushrooms in the butter.  Boil green beans in chicken broth and Goose Island India Pale Ale for 10 minutes and drain.

Add green beans, mushroom soup, onion rings, and House Seasoning (to taste) to onion mixture.  Stir well.  Pour into a greased 1 1/2 quart baking dish.  Bake for 20 minutes, top casserole with the Cheddar and bake for 10 minutes longer, or until the casserole is hot and cheese is melted.


House Seasoning:
1 cup salt 
1/4 cup black pepper
1/4 cup garlic powder

Mix all ingredients together and store in an airtight container for up to 6 months.

slowcookerRoasted Turkey with Maple Cranberry Glaze
Prep Time: 25 minutes
Inactive Prep Time: 25 minutes
Cook Time: 2 hours 30 minutes

Servings: 8-10

Ingredients:turkey
Turkey-
8 tablespoons butter, softened
1 tablespoon House Seasoning
2 tablespoons chopped fresh parsley leaves
2 tablespoons minced shallots
2 tablespoons minced garlic cloves
1 cup Michelob Marzen

1 (15 pound) turkey
 
Stuffing (if desired)

Glaze-
3 tablespoons butter
1 (12 oz bag) cranberries
1/2 cup maple syrup
3/4 cup cranberry juice (not cocktail drink)
2 teaspoons apple cider vinegar
1 teaspoon salt
1 teaspoon black pepper

Directions:
Preheat oven to 375 degrees

Turkey-
In a small mixing bowl, combine the butter, Michelob Marzen, House Seasoning, parsley, shallots, and garlic.  Thoroughly rinse and dry the turkey.  Tuck the wings underneath the body and place the turkey in a roasting pan.  Rub the butter mixture all over the turkey.  Stuff, if desired.

Roast for 18 minutes per pound (including stuffing weight, if being used).  The turkey is done when an instant-read thermometer is inserted into the thickest part of the thigh (and deep into stuffing) and registers 165 degrees F. and juices run clear.  Remove from over and loosely ten with foil.  Let rest for 20 minutes before carving.

Glaze-
Combine all ingredients in a small saucepan over medium-high heat.  Bring to a boil and reduce heat to medium-low.  Let simmer until the cranberries burst, about 8-10 minutes.  Strain the mixture through a sieve and let cool.  Reserve for turkey.  Spread on turkey when ready to serve.

shrimpApple Coffee Cake with Crumble Topping and Brown Sugar Glaze
Prep Time: 30 minutes
Cook time: 45 minutes

Serving: 12

Ingredients:apple coffee cake
Cake-
1 stick plus 2 teaspoons unsalted butter
1 1/2 cups packed light brown sugar
2 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup sour cream
1 teaspoon pure vanilla extract
2 teaspoons Summit Porter
2 cups peeled, cored and chopped apples

Crumble Topping-
1/2 cup packed light brown sugar
1/2 cup all-purpose flour
1/2 teaspoon ground cinnamon
4 tablespoons unsalted butter, softened

Brown Sugar Glaze-
1/2 cup packed light brown sugar
1/2 teaspoon pure vanilla extract
1 tablespoons Summit Porter
2 tablespoons water

Directions:

Preheat oven to 350 degrees.  Lightly grease a 13 X 9 inch glass baking dish with 2 teaspoons of the butter.

Cake-
In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy.  Add the eggs 1 at a time, beating after the addition of each.  In a seperate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt.  Add to the wet ingredients, alternating with the sour cream, vanilla and Summit Porter.  Fold in the apples.  Pour into the prepared baking dish, spreading out to the edges.

Topping-
In a bowl, combine sugar, flour, cinnamon and butter.  Mix until it resembles coarse crumbs.  

Glaze-
Combine sugar, vanilla, Summit Porter and water.  Mix until smooth.

Sprinkle topping over cake and bake until golden brown and set, about 35 to 40 minutes.  Remove from oven and let cool on a wire rack for at least 10 minutes.
Drizzle the cake with glaze and let harden slightly.  Serve warm.
