Samuel Adams and Artisian Butcher Jake Dickson unveil original specialty beef cut designed for the ultimate beef and beer pairing!
 
"Twenty five years ago, people thought the ultimate food and beer pairing was a 6-pack and a pizza, but today people think of craft beer more like wine. At Samuel Adams, we've always been committed to elevating people's perception of food and beer" said Founder and Brewer Jim Koch.  "I think working with specialty food purveyors, like Jake, to isolate very specific types of food pairings, like beef and craft beer, is taking that passion to the next level."
 

Today, the brewers at Samuel Adams and artisanal meat purveyor Jake Dickson unveil the innovative Samuel Adams Boston Lager Cut, the perfect beef counterpart for Samuel Adams Boston Lager.  The partnership between the brewers and Dickson, owner of Dickson's Farmstand Meats in New York City, marks the first time a brewer and specialty meat purveyor have teamed up to design an original cut of beef. Samuel Adams Boston Lager is the perfect pairing for the Samuel Adams Boston Lager Cut; the brew's upfront malt flavor matches the caramelized flavors of the meat, and its hoppy finish prepares the palate for the next bite. 

 

Cut from the cap to the top sirloin, the Samuel Adams Boston Lager Cut has a tender texture and big beefy flavor.  The Samuel Adams Boston Lager Cut runs at a 45 degree angle to the rest of the muscle, yielding a tightly grained steak perfect for grilling and slicing.  This carving method optimizes the Cut's cooking properties and flavor potential, enhancing the pairing capabilities.  The beef and beer intersect with great caramel notes and sweetness, while the elegant hoppiness of Samuel Adams Boston Lager finishes the lingering meaty flavor of the Cut.  To achieve the recommended medium-rare to medium temperature and make the most of the cut's beefy flavor, Dickson suggests searing the steak on high heat for four to five minutes per side.  For a more well done cut, follow the searing with four to five minutes of indirect heat in the oven.

 

Available now, the Samuel Adams Boston Lager Cut is the perfect steak for any beer lover's grill this summer.  The Cut is currently being sold at Dickson's Farmstand Meats in Chelsea Market and will be available at select David Burke restaurants.  A similar type of cut can be ordered through specialty butcher shops by requesting a three-quarter inch cut from the cap to the top sirloin.  The "fat cap" should be left on to aid in cooking the cut properly.  When cut correctly, it will resemble a leaner New York Strip or Shell Steak.  While this cut is specially designed to be the perfect pairing for Samuel Adams Boston Lager, the full-flavored craft brew pairs well with any type of beef dish from burgers to steak and everything in between.

Millstream 25th Anniversary!
In Amana, three Amana men decided to revive the art that hadn't been practiced for years - the art of brewing beer. Carroll F. Zuber and brothers James and Dennis Roemig dreamt of building a small brewery to produce small batches of hand brewed beer reminiscent of Europe's finest brews.
 
To brew the best, they needed the best. They decided to call on one of America's premier brewers, Joesph Pickett Sr. He helped in the brewery
design, the development of the beers, Millstream Lager, and the robust Schild Brau. Later, Millstream Brewers developed the zesty Millstream Wheat Beer.

In 1985, Millstream Brewing Co. opened its doors. It was the first brewery to operate in Amana since 1884. It has come to be recognized as the home of quality brews of rewarding taste. The story continues in 2000, with the sale of the brewery to Chris Priebe, Aaron Taubman, and Teresa Sly Albert.
 
The owners are committed to making quality brews, one batch at a time. The brewers introduced the Millstream German Pilsner, a beer whose hop bite is appreciated by today's beer drinkers. They were so excited by the Pils that they kept on creating. Research was done into traditional german bock beers, resultiing in the Schokolade Bock and an improved Maifest (MaiBock). Warsh Pail Ale and Schild Brau Amber wer also created to spice up the product line. Today, Schild Brau Amber is still the brewery's number one beer.
 
They are happy and proud to serve local customers in this Midwest state.

Beer and Ginger Marinade
 
1-1/2 cups flat Shock Top Belgian White
1/2 cup olive oil
2 tablespoons finely chopped fresh ginger
2 cloves garlic, coarsely chopped
1 (1-by-3-inch) piece of orange peel
 
Prep time: 5 minutes
 
In a nonreactive bowl, combine Shock Top, olive oil, ginger, garlic, and orange peel. Use a receptacle large enough to snugly hold the meat but not too large or flavor will not penetrate. Cover tightly and be sure to leave the meat in the marinade long enough to pick up the flavors of the liquid, at least 6 hours and up to 48. Turn frequently so that the marinade is evenly distributed. Strain and use as a basting sauce if desired.

Yield: About 2 cups

Beer Brined Pork ChopsBeer-Brined Grilled Pork Chops
 
Brine
2 cups hot water
1/4 cup kosher salt
1/4 cup brown sugar
1/4 cup molasses
1 bottle Michelob Amber Bock
1 1/2 cups ice
 
Chops
6 pork chops, bone-in
6 cloves garlic, minced
2 teaspoons salt
2 teaspoons black pepper
 
Prep time: 15 minutes
Cook time: 20 minutes
 
Combine all ingredients for brine in a large bowl.
 
Place chops in a resealable plastic bag and pour brine over it. Seal bag and place in refrigerator for 3-5 hours.
 
Preheat grill for medium-high heat.
 
Combine garlic, salt, and black pepper in a small bowl.
 
Take chops out of bag, pat dry, and rub with garlic mixture. Place pork chops on grill and cook for 10-12 minutes per side.
 
Remove and serve.

Cherry Beer Cake

3/4 cup maraschino cherries, divided use          
2 teaspoons butter, melted
2 cups all-purpose flour, sifted                       
1 cup - 2 tablespoons Sam Adams Cherry Wheat
2 teaspoons baking powder
1/4 teaspoon salt                                         
1 cup powdered sugar
4 eggs, at room temperature
2 cups granulated sugar                      
 
Prep time: 15 minutes
Cook time: 30 minutes
 
Preheat oven to 375 degrees F. Grease and flour a bundt cake pan. Cut about 16 of the cherries in half lengthwise and arrange them in the bottom and up the sides of each of the small channels in the bundt pan. You should have 8 evenly-spaced rows in spokes going outward from the center tube. Chop enough of the remaining cherries to make 1/4 cup, squeeze dry in paper towels, and set aside.

In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

In a large bowl, beat eggs on high speed until thick and light in color, about 3 to 5 minutes. Beat in sugar 1/4 at a time until combined, then add vanilla extract.
Using a large spatula, fold flour mixture into egg and sugar mixture.

Heat 1 cup of Cherry Wheat just until bubbles begin to rise around the edge of the pan. Add warm Cherry Wheat along with melted butter to the batter, stirring gently to combine. Pour batter into the prepared pan being careful not to dislodge cherries. (Batter will appear to be thin.) Sprinkle the chopped cherries over the top of the batter (they will sink to the bottom).

Bake 30 minutes. Do not over-bake. Cool on rack for 10 minutes, and loosen cake around the inner and outer edges of the pan with a thin spatula. Invert onto a large platter and let cool to room temperature.

Whisk together confectioners' sugar and 2 Tablespoons of Cherry Wheat until smooth. Scrape the icing into a zip-top bag and squeeze out the air. Snip a tiny corner from the bottom of the bag and drizzle the icing in between the rows of cherries.
 
Serve and enjoy!
