Iowa's beer connoisseurs are celebrating as a wave of new high proof beers start to populate retail shelves and pubs in Iowa after changes in state regulations. The bill Senate Fill 2088 increased the allowable alcohol by volume on beer carried by distributors. Previously high-proof beers had to go though the state alcohol division. The bill also upped the ABV on beers made at Iowa breweries giving them equal playing field with out of state breweries.
Consumers of high-proof craft beers are typically connoisseurs rather than seeking an effect from alcohol. With these beers, they are drinking them for the taste and to enjoy with food and Iowa breweries are excited to start brewing!

| Congratulations to Millstream Brewing Co.! | Millstream Brewing Company recently claimed a gold medal in the Brewers Association (BA) World Beer Cup 2010, a global beer competition that elevates beers from around the world recognizes the most outstanding beers being produced in the world today. Gold, silver and bronze medals in the competition's 90 beer-style categories were awarded April 10, 2010 during the World Beer Cup Gala Awards Dinner in Chicago, Ill. Millstream Brewery is the first brewery in Iowa to bring home the coveted Gold Medal at the World Beer Cup and only the second in Iowa history to bring home any type of medal.
Millstream Brewery was awarded a gold medal in the Vienna Lager style category for its Schild Brau Amber. The Schild Brau Amber, already a national award winning beer, is now a 14 time award winning brew. The Schild Brau Amber has a very malty full-bodied flavor and boasts a rich coppery color. This is one of the original beers that started with the brewery 25 years ago and has proved the test of time over and over again. Millstream is a 2600-bbl. microbrewery, located in the historic Amana Colonies that specializes in German style beers. Millstream is celebrating its 25th anniversary this year and is Iowa's largest and oldest microbrewery. Most microbreweries did not start coming into existence until the early 1990's so Millstream was a pioneer of its time in 1985. The 25th Anniversary Dopple Bock will be released at the Amana Colonies Maifest on May 1st.
"We feel overwhelmed to be honored by a panel of our peers and mentors. We work hard on the quality of our beers. This represents the culmination of our efforts." said brewmaster/co-owner, Chris Priebe.
World Beer Cup 2010 winners were selected by an international panel of 179 beer judges from 27 countries. This year an impressive field of 3,330 entries from 642 breweries in 44 countries and 47 states vied for awards in the competition. Samuel Adams Double Bock
First brewed 20 years ago as the first of the Samuel Adams seasonal offerings, and it is now one of their most acclaimed beers. Double Bock became one of the first big beers to be brewed here in the US, and we are now happy to offer it year round. We use an enormous amount of malted barley, half a pound per bottle, to brew this intensely rich lager. Its deep mahogany color and velvet smooth flavor is a testament to the beer's high quality two-row malted barley.
Samuel Adams Imperial White
Its a new perspective on the classic witbier style. Witbiers are normally light and refreshing with a fruity finish and we wanted to see how these characteristics would stand up when we amped up the recipe. We were totally blown away by the flavors that were created by this beer. It is more of a wine substitute than just another refreshing witbier. Imperial White should be sipped and savored and you'll be amazed at the flavors you'll discover as the beer warms and opens up.
Samuel Adams Imperial Stout
Is their take on the traditional Russian Imperial Stouts from the 18th century. While this style originated in England, it is a style now known for being uniquely American as craft brewers have taken it to a whole new level of flavor and complexity. It's a massive beer filled with big, dark flavors. It has been a brewery favorite in recent years and they are excited to share this intense brew with you. |

Perfect Dip for Summer Festivities! |
Green Olive Chili Beer Dip
1 bottle Beach Bum Blonde Ale 1 Serrano chili pepper
3 tbsp extra virgin olive oil, divided 1 onion, chopped
4 cloves garlic, coursely chopped 1 jar large pitted stuffed olives, drained
1/4 cup tahini paste 1 1/2 tbsp lemon juice
1 tsp honey 1/2 tsp ground coriander
1/4 tsp ground cumin 1/4 tsp black pepper
1/4 cup cilantro, finely chopped 1 plum tomato, diced
2 tbsp unsalted pistachios, coursely chopped 1/2 tsp kosher salt
Make a slit in Serrano chili; place in a small saucepan. Add beer; bring to a boil. Remove from heat, cover and let steep 1 hour to make Chili beer. In large skillet over medium heat, warm 2 tbsp olive oil; add garlic and onion. Saute 3 minutes; add olives and saute 2 minutes longer. Add Chili beer and pepper; boil 10 minutes to cook most of the beer away. Cool.
Transfer olive mixture to food processor, add tahini, lemon juice, honey, coriander, cumin and pepper. Process mixture until smooth. Stir in cilantro; cover and refrigerate 1 hour.
To serve, scatter top with tomatoes, pistachos, salt and remaining tbsp of olive oil. Serve with pita chips or bread. Serves 8. |

Beer Puffs
8 tbsp of butter
1 cup sifted all-purpose flour
1/2 tsp salt
4 eggs
Filling of our choice
Preheat oven to 450 degrees. Line baking sheets with parchment paper.
In a heavy saucepan, heat beer and butter until it barely comes to a boil and the butter is melted. Add the flour and salt, lower heat and stir constantly until the mixture pulls away from the side of the pan and forms a ball. Remove from the heat and let rest 1 minute. Add eggs, one at a time, beating each one until the dough is shiny. Drop or pipe dough in 1 inch rounds onto prepared baking sheets. Bake 10 minutes at 450 degrees. Reduce heat to 350 degrees and turn baking sheets. Bake beer puffs an additional 10 minutes until brown and dry. Turn oven off, crack open the oven door, and let puffs dry further until cool.
Split beer puffs with a fork (or slice) and fill with your choice of fillings such as pate, chicken salad, tuna salad, seafood salad, vegetable cheese mix, pudding, mousse or whatever your heart desires. Makes 60 to 80 small puffs. |
Grilling Steaks! |
Ribeye Steak Marinate
1/2 cup soy sauce
1/4 cup real maple syrup
6 cloves garlic, minced
1 tbsp grated fresh ginger
1 tsp mustard powder
1/2 tsp sesame oil
1/4 tsp hot pepper sauce
In a medium size mixing bowl, combine soy sauce, maple syrup, garlic, ginger root, mustard powder, sesame oil and Tabasco sauce; mix well to blend. Now add beer and stir lightly to mix.
Prepare steaks by scoring any fatty outside areas on steak with a knife, this prevents steak from curling when grillling. Place steaks in a casserole dish and pour marinade over. Cover with a clear wrap and let set for 1 hour or longer, up to overnight.
Prepare and preheat grill to high heat. Place steaks directly on grill and sear one side for about 15 seconds. Turn steaks over and cook for about 5 minutes, then turn over and cook for another 5 minutes on first side for a medium-rare depending on the thickness of the steak. |
