Summer is here!  It is a great time to enjoy locally grown fruits and vegetables and get outside and exercise.  Play safe, wear sunscreen and get adjusted!

Join Us for the Cheesehead Chase - July 10th
We are gearing up for the Cheesehead Chase - 2 mile walk/run, 5 mile run and new special short distance "cheese curd" race for ages under 5!  The Chiro-Health Cruisers will be showing up in Cheesehead runfull force.  We would love to have you on our team!  All registrants will receive runner bags with goodies, a cheesehead t-shirt, Chiro-Health t-shirt, and a great morning of fun and exercise.  Please return your entry form to our office by June 18th (a bit earlier than the deadline on the form so we can process them and get our shirts ordered).  We would love to help you reach your exercise goals and see you out there on July 10th!  If you would like some training tips, please let us know!

"After the season, my teammates and coach admitted that they never expected to see me on the court again."
 
On Wednesday February 24, during the last week of basketball practice, two days before the final regular season game against Waupun, I came down on a teammate's foot and sprained my ankle.   My ankle swelled up like a balloon as soon as I took my shoe off.  I immediately iced my ankle, had it wrapped and continued icing through all of the next day.   I knew I would not be playing in Waupun on Friday February 26, but I was determined to do whatever I had to do to play in the regional game that was less than a week away.

On Friday February 26, I went to see Dr. Cindy Munson for  light therapy, which I had heard about from teammates.  Dr. Cindy did x-rays,  light therapy and an adjustment.  I felt so much better after the adjustment, something I probably really needed after the pounding on my body from football, basketball and weight lifting.  Knowing how badly I wanted to get back on the court, Dr. Cindy suggested another appointment for an adjustment and  light therapy on Sunday February 28th, yes SUNDAY!   I took her up on it. 

On Monday, March 1st I saw her again.  I wasn't able to start the regional game on Tuesday March 2, less than a week after my sprain, but was able to play over three quarters of the game.  I did continue therapy every other day and needed to have my ankle wrapped, but I was good enough to play the entire game on Thursday March 4 and again on Saturday March 6.  Unfortunately the Saturday game ended up being the Panthers last game of the season and my last high school sporting competition, but I was able to play and my senior year did not end with an injury.   

After the season, my teammates and coach admitted that they never expected to see me on the court again after they saw my ankle that first night.  I know that the  light therapy from Dr. Cindy had really helped my ankle heal.    I am grateful to Dr. Cindy for her commitment to help me reach my goal of playing.  She went out of her way on a Sunday to help me out.  I do continue to get adjustments with Dr. Cindy which are relaxing and help get everything back where it needs to be.

Recipe
Summer Vegetable Soup
 
Ingredients:
1 T olive oil
1 yellow onion, chopped
3 cloves garlic, chopped
4 plum (Roma) tomatoes, peeled and seeded, then diced
1 T chopped fresh oregano or 1 tsp dried oregano
1 tsp ground cumin
4 c vegetable stock or broth
1 bay leaf
1 carrot, peeled, halved lengthwise, and thinly sliced crosswise
1 yellow bell pepper, seeded and diced
1 zucchini, halved lengthwise and thinly sliced crosswise
1 T grated lemon zest
2 T chopped fresh cilantro (fresh coriander)
1/4 tsp salt
1/4 tsp freshly ground black pepper
 
Directions:
In a large saucepan, heat the olive oil over med. heat.  Add the onion and saute until soft and translucent, about 4 minutes.  Add the garlic and saute for 30 seconds; don't let the garlic brown.  Add the tomatoes, oregano and cumin and saute until the tomatoes are softened, about 4 min.
 
Add the stock and bay leaf and bring to a boil, then reduce the heat to medium low and bring to a simmer.  Add the carrot and bell pepper and cook for 2 minutes.  Add the zucchini and simmer until the vegetables are tender, about 3 minutes longer. Stir in the lemon zest and cilantro.   Season with the salt and pepper.  Discard the bay leaf.   
Serve and Enjoy!
