is month's recipe, shared from Chef Bernard's private recipe file  ~ Rabbit with Mustard Sauce ~ is especially appealing to fitness conscious people due to the leanness of rabbit meat.  As an added health benefit, when shopping, look for products that have been organically grown or raised, or in the case of EcoFriendly Foods, "Beyond Organic".  EFF has set their own standards which are required of all of their producers/farmers.  The standards not only meet the USDA organic standards they also address major concerns related to animal husbandry that have not been addressed in the codified standards: Issues such as access to outdoors(true "free range"), humane raising and handling, and grass-fed and grass finished beef and lamb.
