Dear Friends,         

     January 1st is here and the start of a new year, 2010. I can remember last New Year's like it was yesterday. 2009 had arrived and with it a whole slew of new ideas and goals. As I look back on that year I am thrilled to say I have accomplished so many of those goals. On Sep. 14th 2009 I opened a beautiful new studio and a huge dream of mine came to life. It was never one thing that propelled me forward but many tiny little turns in the road that led me to this accomplishment. So many wonderful clients and words of support along the way helped me realize this vision. As we go forth into 2010 I remind you to pay attention to the little things along the way, for it is among the small details that dreams take shape.

             The Little Things 
 The little things in life, the little moments. They aren't little. They often turn out to be the most memorable and meaningful things we encounter. We may not recognize them while they are happening, or have the words to describe how they make us feel. We may seldom talk about them, but they affect us deeply.
 

     

 

 

 

      If we sat down to think about the precious little things in life - those that make our lives more vibrant, connected and inspired we would find genuine , heartfelt moments that shape our lives and make us who we are. Little things like a job well done, a smile from a stranger, a hug , an honest compliment, taking time to play and being a good person. The little things really are the cornerstone of a full life.

 

       We cannot take the little things for granted nor can we ignore them. They have built companies, friendships and just about everything of value. No act of generosity , kindness or service is ever wasted , no matter how small. Everything matters. Everything we do helps or hurts , adds up or takes away. We need to count on each other for the little things that make life so big. In the end, it is not the days or the years that we will remember but the moments, the little things!!

Food Focus:  KALE

Kale is definately a superstar vegetable, even though most people don't even know what it is.  (It's a green, wierd-looking leafy vegetable that is actually a form of cabbage.)  But don't let its strange looks put you off.  This vegetable is a nutritional powerhouse. 

Why is Kale number one?   In fact, in the "rankings" it comes out on top.  Currently, there is a testing procedures used by the USDA and others to determine the antioxidant capacity of fruits and vegetables.
They look at all the different antioxidants and phytochemicals that are found in a plant food and determine how well everything works together as a team - how much actual ability the "team" has to fight cell-damaging free readicals.  The foods are given what's called an ORAC rating; ORAC stands for oxygen radical absorbance capacity.  Though there are different versions of the test, the best known has kale as  number one among vegetables, with an ORAC rating of 1770, the next best is spinach, with an ORAC value of 1260.

Prevent cancer as you chew.  Because it's a cabbage, kale has even more benefits than it's antioxidant power.  It has powerful plant compounds that have been found to have a protective effect against breast, cervical and colon cancer.  Kale is high in sulforaphane, which are formed when you chop or chew it,  that trigger the liver to remove free radicals and other chemicals that may cause DNA damage.  In fact, a recent study in the Journal or Nutrition demonstrated that sulforaphane helps stop breast cancer proliferation.

Kale is loaded with calcium, iron, and vitamins A, C and bone building K.   Kale is a terrific addition to salads, a simple recipe of kales leaves mixed with pine nuts and canberries, tossed with olive oil is sure to become a favorite meal.
Recipe of the Month:      Celeriac Soup
 serves 4
 
3 tbsp olive oil
1 onion, chopped
1 celeriac, peeled and cut into chunks
4 cups good-quality vegetable stock
1 small bunch fresh thyme, chopped; reserving whole sprigs,
    for garnish
salt and pepper

1.  Heat the oil in a large saucepan over medium heat, then add
     onion and cook, stirring frequently, for 3-4 minutes.  Pour in
     the stock and add the thyme.  Simmer for 25 minutes, or until
     the celeriac is tender.

2.  Transfer the soup to a food processor and blend until smooth.  
     Alternately, use a hand blender to blend the soup until smooth
     in the saucepan.  Gently reheat the soup in the saucepan.
     Season with salt and pepper.

3.  Pour the soup into warmed bowls and garnish with thyme sprigs.
 
Recipe of the Month:      Grilled Scallops with 
                                          Crispy Leeks 
 serves 6

6 chunky leeks
scant 1/2 stick butter
1 scant tsp thick-set honey
Olive or sunflower oil for deep-frying
1-2 tbsp olive oil
freshly squeezed lemon juice, to taste
salt and pepper
sea salt flakes

1.  Trim the leeks and roughly chop five of them.  Halve the
     remaining leek, then cut into very fine julienne and reserve.
     Heat the butter in a skillet over medium heat, then add the
     chopped leeks and cook, stirring frequently, for 5 minutes
     or until softened but not colored.  Add the honey, then
     season to taste with salt and pepper and keep warm.

2.  Meanwhile, heat the oil for deep frying in a deep fat fryer or wok to
    350 degrees or until a cube of bread browns in 30 seconds.  Add
    the leek julienne to the hot oil and cook until crisp and golden.
    Remove with a slotted spoon and drain on paper towels.
    Lightly scatter with sea salt flakes.

3.  Heat a ridged grill pan over high heat.  Brush the scallops with the
     olive oil, then add to the hot grill pan and cook for a little over 1
     minute on each side.  Remove from the heat and season with
     lemon juice to taste with a light sprinkling of salt.

4.  Place a dollop of buttered leets onto each of six warmed
      serving places.  Top each with 3 scaloops, then add a tangle
      of crispy leeks and serve immediately.
