Recipe of the Month ~ Blueberry & Ginger Pancakes

1 cup whole wheat organic flour 1 t baking powder 1 t baking soda dash Himalayan salt 1 t fresh ginger, chopped 1 T pure maple syrup 1 cup almond milk or rice milk 1 T almond oil 1 egg yolk, lightly beaten 1 egg white, stiffly beaten ¾ cups fresh or frozen blueberries 1/3 cup organic goat milk yogurt pure maple syrup to taste Sift your dry ingredients together. Whip egg white and set aside. Mix a tablespoon of maple syrup with almond milk, ginger, oil and vanilla, then beat in the egg yolk. Make a well in the centre of the dry ingredients then pour in the wet ingredients, mixing only until just blended. Carefully fold in beaten egg white, followed by blueberries. Heat griddle over medium heat. Oil lightly, then immediately pour 2 tbs of batter at a time making small medallions. Turn heat down to medium-low and continue cooking until golden brown on the bottom side and bubbly on top. Flip and cook until underside is golden brown. Serve with a dollop of organic goat milk yogurt and a drizzle of pure maple syrup. Serves 2
