Greetings!
Welcome! During the month of October, Brethren Insurance Services is focused on open enrollment. You should be receiving updated information from your employer about the options available, along with any forms that need to be completed. Please keep in mind that the deadline for any updates to your enrollment is Oct. 31, 2010. All forms must be postmarked by then in order for us to process your elections. Remember: This is also an open enrollment period for Basic Life and Accidental Death and Dismemberment, Supplemental and Dependent Life, and Accidental Death and Dismemberment and Long-Term Disability for anyone who has never previously applied for these benefits through Brethren Insurance Services.Brethren Insurance Services is sad to announce that Randy Yoder will be leaving his position as director of Insurance Services as of Dec. 31, 2010. However, we are very pleased to announce that Willie Hisey Pierson will be assuming the position of director of Insurance Services effective Jan. 1, 2011. Willie and Randy will work together through the end of this year to ensure a smooth transition.
Willie has been a business owner in the home health field and has more than 16 years of experience in the insurance industry, including underwriting -- essential knowledge to undergird the Brethren Medical Plan. Additionally, while working for American Family Insurance, Willie was credited for developing and executing marketing strategies that incorporated multicultural awareness. Willie holds a Bachelor of Science from National-Louis University in Wheaton, Ill., and holds an Illinois Insurance Producer License in Property, Casualty, Health, Accident, and Life. He has been a member of the Church of the Brethren's Mission and Ministry Board and the Board of Directors for Athletes Against Drugs in Chicago.Willie and his family reside in Plainfield, Ill., and belong to Neighborhood Church of the Brethren.
We wish Randy all the best as he moves to a new position with Brethren Insurance Services, in which he will focus on delivering Long-Term Care insurance to Brethren members and employees. Contact Randy for more information and to receive a quote!

 After a long day at work, the last thing you want to worry about is how to prepare a quick, healthful meal for your family. Why not let Highmark help you? If you log in to Highmark's Web site at www.highmarkbcbs.com, click on Health Topics, and then click on Recipe of the Day, you can have access to a fresh, low-fat recipe every day of the week. Why not print the recipe on your way out of the office and take it to the grocery store with you? Here's one example of the delicious recipes Highmark offers -- Balsamic Grilled Chicken and Vegetables
Ingredients
1/4 c balsamic vinegar
1 lb boneless, skinless chicken breast
1/2 t coarsely ground black pepper
1/2 t dried oregano
1/2 t dried rosemary, crushed, crumbled
1 1/2 t minced garlic
2 t olive oil
2 red onions, cut into 6 wedges
2 red potatoes, quartered lengthwise and cooked
1 sweet red pepper, cut into 2-inch (5 cm) strips
1 sweet yellow pepper, cut into 2-inch (5 cm) strips
Directions In a 9 x 13-inch (3-L) glass baking dish, combine the vinegar, oil, garlic, rosemary, oregano, and pepper. Add the chicken, turning to coat with the marinade. Cover the chicken and refrigerate for at least 30 minutes.
Add the potatoes, onion wedges, and pepper strips to the marinade.
Coat a grill rack with nonstick spray. Fire up the grill and heat for 10 minutes. Place the rack on the grill. Arrange the chicken and vegetables on the grill, reserving the marinade.
Cook, turning the chicken and vegetables occasionally and brushing with the reserved marinade until the chicken loses its pink color throughout and the vegetables are tender, 8 to 10 minutes.
