Chili Chicken Enchilada
1 cup green sauce
1 small can chopped tomatoes
1/4 cup fresh cilantro
2 teaspoons Chili Lime Ellbees
2 chicken breasts
(2 cups)
1 cup shredded mozzarella cheese
6 flour tortillas
Mix green sauce, tomatoes, cilantro in food processor until smooth. Slice chicken in small strips, roll in Ellbee's and saute in pan 5 minutes, add 1/2 of mixture to pan and simmer 15 minutes, add 1/2 cup of cheese. Spoon 1/4 cup of chicken mixture into each flour tortilla and roll; place seam side down in baking dish. Pour reserve sauce and cheese over enchiladas, bake uncovered 20 minutes @ 350* Easy and delicious!

Asian Beef & Broccoli
2 cups uncooked instant rice
2 1/4 cups water or chicken broth
1 pound stew meat, or round steak sliced
1/4 cup lite soy sauce
1/4 cup water
2 teaspoons Asian Ginger Ellbee's
1 -16oz. frozen bag of stir fry vegetables
Cook rice according to package.
While rice is cooking, saute meat ,Ellbee's, soy sauce, and water until tender. 15-20 minutes. Add vegetables and simmer until heated through.
Place rice on platter, pour meat and vegetable mixture over rice. Nice and easy. |
