Greetings! Despite near freezing temperatures overnight, we still have flowers
blooming in the garden: chrysanthemums,
Raydon's Favorite asters, Safari marigolds, and ground cover roses.
Manhattan had spectacular autumn foliage in October, probably due to this year's mild summer temperatures and adequate precipitation. Bill is back from Australia. (Yeah!) He and his racing buddies had a wonderful time on and off the tracks. While he was away, the girls and I stayed busy at the bed and breakfast and enjoyed visiting with our guests. Morning Star Artists and Authors: Louis Copt
Louis and Phyllis Copt have stayed with us at the B & B several times and have been delightful guests. Louis primarily paints landscapes, but also does figures, portraits, still lifes, and abstract pieces. He works in oil, acrylic, watercolor and pastel. A selection of his atmospheric Western landscapes is being exhibited right now at the Strecker-Nelson Gallery. (I've been up to the show four times already!) Cranberry Compote (from A Taste of Morning)
1 c. granulated white sugar1/2 c. cold water 6 whole cloves 3 whole allspice 2 cinnamon sticks 1/2 c. dried cranberries 1/2 c. dried apricots 1/2 c. raisins or chopped dried dates 3 c. whole fresh cranberries 1/2 c. pecans, coarsely chopped zest of 1 fragrant orange, minced or grated 1 1/2 c. chopped fresh apple or pear, optional Bring granulated sugar, water, cloves, allspice and cinnamon sticks to a boil over medium heat. Reduce heat to low. Simmer 10 minutes. Remove spices. Add dried cranberries, apricots, and raisins or dates to sugar syrup. Simmer 5 minutes. Remove from heat. Immediately stir in cranberries, pecans and orange zest. Cover. Let sit 5 to 10 minutes. Serve warm or cold. If desired, stir apple or pear into compote just before serving. Cover and chill unused portions. Yields 8 servings. Note: This can be served on its own, mixed into yogurt, or mixed with maple syrup, heated and served over French Toast. I make this every year between Thanksgiving and Christmas when fresh cranberries are available. Vince from New York recently read Water for Elephants by Sara Gruen and described it as one of the most entertaining books that he has ever read.It is a 90 year old man's story about his days working for the circus during the great depression. Here's what Vince had to say about it: " I love the circus and the characters that made up the thirties Train Circuses. You will be absorbed by the vivid settings, the plot, and the characters. You will be rooting for them in different ways. You will wonder how it ends and revel in it when the author spreads it out." Full of adventure and passion, and wonderfully well-written, from what I can tell, Water for Elephants is one of those rare books equally loved by men and women alike.
