Greetings Fellow Culinarians and Associates
I hope all of you have survived our recent snow and ice storms. Hopefully all were prepared as could be and had emergency plans in place. My wife and I have been without power for a week as of this writing and still no sight as to when it will be restored. Unfortunately we were not prepared as we should have been so have been residing in my place of employment. We have several guest rooms available, has been nice to see things from our residents perspective.

January 2012 WSCA Meeting
We had a great meeting at Bargreen-Ellingson last  month. I hope all of you had a chance to be there, the turnout was great. Our special thanks to Chef Bob and the team he assembled to showcase some new cooking equipment and certainly some great food.  

 

February 2012 WSCA Meeting Our next meeting looks to be just as exciting. Our talented chef Tamas Ronyai will be giving us a chocolate demonstration and some great food prepared by his students at FareStart. It is centrally located in downtown Seattle, a great location for all of us to come and gain some great insights into chocolate and how to create some stunning desserts and show how to create a showpiece. January 2012 Board Meeting
Our monthly board meeting was fruitful in that we had some great discussions on the apprenticeship program. It is our goal to make that a great and sustainable program. Under Chef Fisher and Pratt we should see this materialize. I have asked each board member to submit his/her current roles and responsibility sheets so that we can begin to have some structured departments. As we progress through this year we are hopeful also to begin to further the cause of our Foundation and the ability to find ways to distribute more educational scholarships and grants.  

 

Western Regional Conference 
The Western regional Conference is just around the corner. It will be in Reno Nevada from March 12-14th. This is a great way to network and gain additional insight into culinary arts, national updates and networking with various other people in our profession. I look forward to seeing as many of you there as possible.

FEBRUARY 2012 WSCA MEETING

Demonstration: Working with Chocolate
 
Come join us to see this dynamic international award-winning Chef demonstrate his amazing talent with chocolate and sugar work.  Chef Ronyai will show you how to make the components of a display centerpiece that you can replicate for your desert buffet. He will also show you how to blow sugar for a plated dessert that you can use to impress your guests on your next special event.
 
Starting in Budapest, Hungary he completed his international chef's papers and apprenticed at the famous Hotel Gellert.  Working with foreign embassies he became exposed to cuisines of all nations. 
 
Teaching the new generation of culinarians is something he takes seriously.  He has taught and developed courses at Paul Bocuse Institute in Lyon, France, George Brown College in Toronto and The Arts Institute in Vancouver.   He worked with the Salvation Army to establish a culinary program for the disadvantaged in North Vancouver. 
 
In 2007 a great opportunity presented itself in Seattle - a new adventure in a new country.  Tamas was energized by the challenge of providing high quality and healthy food options to the fans of The Seattle Mariners at Safeco Field, focusing as much as possible on local products.   While working at Safeco Field he had the opportunity to hire graduates of the Fare start program. Now working at Fare start he is combining everything he loves - cooking, teaching and assisting others.   
Chef Ronyai and his students will provide a reception for us featuring several action stations.

STUDENT SCHOLARSHIPS
Are you a culinary student? Looking for some green?

During our December 2011 meeting we presented our annual Darrell Anderson scholarship for a $1,000.00 scholarship to Shalbe Welsh. 

 

Our local American Academy of Chefs and our ACF Washington State Chapter student scholarship applications are available online. The next Scholarship, Evelyn Enslow Scholarship, will be awarded at our April 2012 meeting. Applications are due by March 15, 2012. See the scholarships page on our website for details.
