We have a great educational seminar planned for you and appetizers at the Seattle Le Cordon Bleu College of Culinary Arts. Chef Richard Carpenter is going to presenting Pate Morte (dead bread) and other bread making techniques. The Cuisines Across Cultures Class will be providing the appetizers for our November meeting.

New Membership Announcement win a trip to our ACF Western Regional Conference
If you are a professional chef and or know one that might have thought about joining the American Culinary Federation and our Washington State Chefs Association Chapter here is an added incentive. We are offering new members who purchase a professional membership between September 1st and December 1st a chance to attend our Western Regional Conference in Reno, Nevada March 12-14, 2012 that's right we will hold a drawing at our December 2011 meeting must be present to win. The Chef whose name is drawn will win airfare, 3 nights and full registration fee. This is a great opportunity to see what happens at our Regional Conference; lots of networking, competitions, educational seminars and great food. Join us now, come to our monthly meetings and see what we do. We support education, student scholarships, community service, ACF certification and competitions. The October meeting was our Annual "Best of the Pacific Northwest" Chowder Competition. I would like to thank all the competitors, the students, professionals and local restaurants owners and chefs. A special thanks to Food Service of America for sponsoring the event and to Chef Kevin Blaylock CEC CSCE and Karl Nore from FSA. They spent a great deal of their time gather supplies, creating flyers, planning the logistics, supporting, and organizing the competitors. South Seattle Community College did a wonderful job hosting this event. Special thanks to the Brockey Center Crew - Bob Sullivan & Ross Johnson. And of course all the helpers on the floor - Nicolas Ganea, Erin Larson, Osweydi Juarez, Nathan Chan, Austin Tovar, Isabel Garza, Jordan Evans & Rachel Officer. Thank you to our elite core of Judges.
