June WSCA Meeting

Come Join Us Monday June 13th at the Muckleshoot Casino. The networking and appetizers start at 6:00 p.m. The educational seminar is at 6:30. Pastry Chef Richard Carpenter from the Le Cordon Bleu Seattle will be demonstrating the Art of sugar. Here are some examples of his work:

 

Richard Carpenter began his Pastry Career after graduating from The Culinary Institute of America, Hyde Park New York (class of 1986).  Richard moved to Orlando Florida to gather valuable hands on experience working in fine hotels and resorts like the Buena Vista Palace, Hyatt Regency Grand Cypress, Westin Walt Disney World Swan and Dolphin Hotels (grand opening team),  Then on the development team of Disney cruise Lines.  After working in the Cruise Industry and in Italy, Richard moved to Colorado to operate the pastry shop at the historic Brown Palace Hotel, before moving back to Florida to lead the pastry team at the Registry Resort, Naples.  During all my pastry experiences, the most important part of my job has always been teaching.  A few minutes out of your day to teach someone something new can last them a lifetime in their career.  Passing on the knowledge and experiences we've had is the most important thing we can give to our students.    Richard is currently a Pastry Chef Instructor at Le Cordon Bleu Seattle, where he continues to teach and train the next generation of pastry professionals. 


Students will have free admission, however they will need to register online with a valid email by June 10th. Cost for members will be $20.00 and non-members will be $25.00.

May Meeting

Our May meeting was about ACF certification and what the process is for each level of certification. If you missed the seminar, check out our national website for more information.

Want to Help Our Chapter?
June is going to be an exciting month for our chapter. June 2nd and 3rd we are holding our 4th annual educational fundraiser at Renton Technical College. We are preparing 6,400 box lunches for our local Special Olympics participants. We start at 2:00 PM each day and dinner will be provided for all volunteers. Come and join us for a great cause.

On June 11th we are having a Culinary Salon Competition at The Art Institute of Seattle.  Click here for more info. 
We are having mystery baskets competitions for students, and chef of the year.

2011 Student Scholarships 
Our local America Academy of Chefs and our ACF Washington State Chapter student scholarship applications are available online and are due July 1, 2010. Our scholarship applications will be reviewed by our chapter's trustees and the scholarship will be awarded at the September 13th meeting. See our Scholarship page for details.

Volunteers are needed to be on the Apprenticeship Committee to help plan out the year and the support of our apprentices. We also need chefs who are willing to teach some apprenticeship classes, or to have an apprentice in their kitchen. NEW 2011 STUDENT SCHOLARSHIPS
Are you a culinary student? Looking for some green?

During our April 2011 meeting we presented our annual Evelyn Enslow scholarship for a $1,000.00 to Dustin Buchholz West South Tech Skills Center student. Dustin plans on attending Seattle Central Community College. 


Our local American Academy of Chefs and our ACF Washington State Chapter student scholarship applications are available online. The next Scholarship, Joseph Sir Scholarship, is due July 15, 2011. Our scholarship applications will be reviewed by our chapter's trustees and the Joseph Sir scholarship will be awarded at the September 2011 meeting.
