Wow! What a night we all had, tasting 24 different, delicious and creative crab cakes in our 1st "Best of the Pacific Northwest event, with Gold Sponsors Ocean Beauty Seafoods and Oregon Dungeness Crab Commission providing all our Dungeness Crab of the competition.

 

Other sponsors served up some of their fantastic Northwest Seafoods, thank you Taylor Shellfish with their sweet succulent oysters,  Crimson Cove with their smoked nuts, salmon and cheeses, Western Foodservice Marketing with their clams and chowder and Two Snooty Chefs smoked salmon corn chowder.

Student volunteers were from Puget Sound & West Sound Tech Skills Centers and Lake Washington Technical College they all did a great job helping out.

Hosting our event, Gene Fritz, Director at the Le Cordon Bleu, and Robert Mullins helped coordinate. Thank you both for all your help, it is appreciated by all in attendance.

 

I would like to express my gratitude to five of our key members that helped make this event a special one to remember, thank you Dan Lewark CEC,  CCA, ACE, Tony Parker CEC, ACE, Kevin Blaylock CEC, Janet Shaffer CWPC and Matthew DiMeo CC.


Next month's meeting on November 8th is an educational meeting with Chef Bob Mauer at Bargreen Ellingson in Tacoma. Bob is going to have some hands-on demonstrations showing off his selections of high tech cooking equipment. This should be a great learning experience for student and chefs. Please join us and make your reservation early. There is limited space available. All proceeds will go to our educational foundation for our scholarship funds. An interactive evening in the state of the art Bargreen Ellingson Test Kitchen

We will be looking at four distinctly different types of equipment.

From the Woodstone Company in Bellingham we will have the woodstone fire deck oven to make pizza, flatbreads and other treats. Also from Woodstone we will have the Josper Grill from Spain which is an enclosed charcoal grill that makes huge flavors. Think of a Weber only large, very hot and fast.

We will have the brand new AltoShaam combi smoker with digital controls. We will be operating through the full range of capabilities of this oven to produce some truly remarkable results.

We will be looking at the fabulous Amana AXP20. High velocity convected air, two 1100 watt microwaves, an IR burner and precise controls through time, degrees of power and stage cooking though all the factors involved. Production times so fast they will shock even the most jaded among you.

We will have factory representation there to give a quick overview and then the kitchen is open. Come up, ask questions, kick the tires and cook some food.   

 

VOLUNTEERS NEEDED!

Volunteers are needed to be on the Apprenticeship Committee to help plan out the year and the support of our apprentices. We also need chefs who are willing to teach some apprenticeship classes, or to have an apprentice in their kitchen. NEW 2010 STUDENT SCHOLARSHIPS
Are you a culinary student? Looking for some green?

During our September meeting we will be presenting our annual Joseph Sir scholarship.
 
Our local America Academy of Chefs and our ACF Washington State Chapter student scholarship applications are available online. The next Scholarship, Darrell Anderson Scholarship, is due November 15, 2010. Our scholarship applications will be reviewed by our chapter's trustees and the Darrell Anderson Scholarship, will be awarded at the December 13th meeting.
