Say Pizza! Yes our September meeting will be at Renton Technical College and we are going to be watching the Verica Traveling Pizza Show in action.

The Veraci Traveling pizza show is fantastic.  Their wood-fired brick lined oven makes some of the BEST artisan pizza around. Should be fun, they make the pizza right in front of you and fire them up in their 1000 degree clay topped oven. See their website at

For our education segment we have Sadie Kendall of Kendall Farms the only creme fraiche designed for chefs. It stays thick when boiled, stabilizes emulsions (e.g., Hollandaise and Beurre blanc will not break or go grainy), and whips to a lofty, stable foam (twice the volume of ordinary whipping cream) that will not break or collapse. Because it is an emulsion, it makes aromatics blossom. These functional properties have been tested and confirmed by The CIA, Hyde Park. No other creme fraiche, especially that you make yourself, can pass these rigorous tests. Please visit their website,

News About Our Chapter   


American Academy of Chefs Culinary Hall of Fame has a new member from our chapter Jim Doulas CCE CEC AAC HOF receive his award at the 2010 National Convention. Congratulation Jim and thank you for all your years of support your have given our chapter.

Our joint golf tournament with the Washington Restaurant Association, Golfing FORE Education at McCormick Woods was a huge success thanks to our chairperson Lyle Hildahl. His leadership and organization skill is greatly appreciated. A special thanks for all our event volunteers, and sponsors. Chef Bruce Bonholzer and his kitchen staff served a great lunch and fabulous appetizers at our awards ceremony.

Washington State Chefs Association is proud to present their annual "Best of the Pacific Northwest" competition and this year it is crab cakes! On October 11th we will be sampling some of the best crab cakes in the Northwest, so bring your favorite recipe and compete for cash prizes in 3 different categories; Professional, Student, and Food Enthusiast.
 
We are holding this event at the new Le Cordon Bleu School in Tukwila on October 11th from 6:00pm to 7:30pm with the awards ceremony at 7:30pm.

VOLUNTEERS NEEDED!

Volunteers are needed to be on the Apprenticeship Committee to help plan out the year and the support of our apprentices. We also need chefs who are willing to teach some apprenticeship classes, or to have an apprentice in their kitchen. NEW 2010 STUDENT SCHOLARSHIPS
Are you a culinary student? Looking for some green?

During our May meeting we presented our 1st annual Evelyn Enslow scholarship for $1,000.00 to South Seattle Community College student Mark Delos Reyes. Mark plans on completing culinary and pastry degrees and then his Bachelor of Arts in Culinary Management at SSCC, congratulation Mark.
 
Our local America Academy of Chefs and our ACF Washington State Chapter student scholarship applications are available online and are due July 1, 2010. Our scholarship applications will be reviewed by our chapter's trustees and the next scholarship, the Joseph Sir Scholarship, will be awarded at the September 13th meeting.
