August 2010

June was a great month for our association. Our chapter provided 6,400 box lunches for the State annual Special Olympics. A special thanks to all the volunteers that spent two nights helping us prepare for this special event at Renton Technical College.  The local schools that helped the volunteers were Renton Technical College, Lake Washington Technical College, and Puget Sound and West Sound Technical Skills Centers. Thanks to all for a job well done. A special thanks to Chef of the Year Tony Parker CCE ACE and John Fisher CEC CCE AAC for organizing this years event.
 
Also in June we held our 1st Annual Chef of the Year, ACF Certifications practical testing and culinary salon at the New Le Cordon Bleu School. We had 29 competitors with 4 Gold, 11 Silver and 8 Bronze medals. For 2011, our Student of the Year is Krista Nakamura and our Chef of the Year is Elijah Dalager; congratulations to all that competed.
 
Dan Lewark CEC ACE is to be congratulated for a fantastic job with our culinary event. He spent numerous hours contacting ACF judges; working with the Le Cordon Bleu School and registering all our competitors. Thanks Dan for all your great work.

Last Monthly Meeting - June 2010
 
Our June meeting was held at Tulalip Casino. I must say they treated us like royalty; Executive Chef Perry Mascitti and his staff put on a show. We had tray-passed appetizers by the indoor pool, and also enjoyed the Smoked Salmon Sate, Beef Tenderloin TaTaki, Gorgonzola Bruschetta and Black Cod Fish and Chips.
 
We then moved into the dining room and thoroughly enjoyed our dinner. The smoked salmon & crab tower was perfect, the Wild green cucumber Bouquet Vase was a work of art, and the braised lamb shank with the huckleberry Demi glace was fork tender and delicious. The dessert was a Hazelnut Linzer with chocolate cream and sour cherry jam, man that was fantastic!
 
Chef Perry, thank you again for being such a gracious host; all of our members will remember this extraordinary dinner.

Our National Convention is in Anaheim, California August 2-5th this year.  Click on the link for additional information.

Don't forget our annual Golf Fore! Education August 9th at McCormick Woods Golf Course. Washington State Chefs and the Washington State Restaurant Association are holding our 2nd annual golf tournament to provide monies for our educational foundations.


Our September meeting is at Renton Technical College. We will be having Veraci Pizza and an educational segment by Sadie Kendall of Kendall Farms. Check our website for details. Visit the Meetings page for more info!

Crab cakes in October!! Yes, we are having the "BEST OF the NORTHWEST" and this year it is crab cakes. So bring your favorite recipe and compete for cash prizes in three different categories; professional, student and food enthusiast. We are holding this event at the NEW Le Cordon Bleu School on October 11th.

The Veraci Traveling pizza show it is fanstantic.  Their wood-fired brick lined oven makes some of the BEST artisan pizza around. Should be fun, they make the pizza right in front of you and fire them up in their 1000 degree clay topped oven.

For our eduational segment we have Sadie Kendall, of Kendall Farms the only creme fraiche designed for chefs. It stays thick when boiled, stabilizes emulsions (e.g., Hollandaise and Beurre blanc will not break or go grainy), and whips to a lofty, stable foam (twice the volume of ordinary whipping cream) that will not break or collapse. Because it is an emulsion, it makes aromatics blossom. These functional properties have been tested and confirmed by The CIA, Hyde Park. No other creme fraiche, especially that you make yourself, can pass these rigorous tests. Washington State Chefs Association is proud to present their annual "Best of the Pacific Northwest" competition and this year it is crab cakes! On October 11th we will be sampling some of the best crab cakes in the Northwest, so bring your favorite recipe and compete for cash prizes in 3 different categories; Professional, Student, and Food Enthusiast.
 
We are holding this event at the new Le Cordon Bleu School in Tukwila on October 11th from 6:00pm to 7:30pm with the awards ceremony at 7:30pm.

NEW 2010 STUDENT SCHOLARSHIPS
Are you a culinary student? Looking for some green?

During our May meeting we presented our 1st annual Evelyn Enslow scholarship for $1,000.00 to South Seattle Community College student Mark Delos Reyes. Mark plans on completing culinary and pastry degrees and then his Bachelor of Arts in Culinary Management at SSCC, congratulation Mark.
 
Our local America Academy of Chefs and our ACF Washington State Chapter student scholarship applications are available online and are due July 1, 2010. Our scholarship applications will be reviewed by our chapter's trustees and the next scholarship, the Joseph Sir Scholarship, will be awarded at the September 13th meeting.
