Message from your President

Chef Larry Fontaine at the Edward D. Hansen Conference Center at Comcast Arena prepared a fantastic menu for our September dinner meeting. Everyone was impressed with the delicious food and the great service. Thank you Chef Larry for all your hard work it is appreciated. You creativity preparation and flavorful courses were fabulous.  Joe Riley from Darigold educated us on dairy products - everything from sustainability, trends and definitions.  Very informative and we thank him for bringing his latest edition of FRESH.  A magazine with incredible articles and recipes.  

Our chapter is commited to giving back to our students and community.  Our board, officers and committee members work very hard to help organize all our special events.  Their efforts help raise monies for our education fund which helps our local students.  This year we are going to start a WSCA/AAC scholarship for our student members.  Letters have gone out to local schools explaining the scholarship along with applications.  Information is also available on the website.  A scholarship will be offered each quarter.  The three scholarships honor past and present members of our association who distinguished themselves by their extraordinary contribution to our association and the culinary community - Darrell Anderson, Evelyn Enslow and Joseph Sir.  

We are starting a new non-profit foundation for our chapter.  Our Chairman of the Board, Brian Date CEC is forming a board of directors to oversee our vision for helping students and apprentices become successful as they proceed through their culinary education and career path.  Please let us know if you would like to be involved with this foundation.

One of our chapter goals is to provide you high quality food, great networking opportunities and informative educational seminars at our monthly meetings. Please join us for our next meeting at Januik/Novelty Hill Winery and Chef Dan Koommoos Dinner.

Novelty Hill · Januik was designed not only to serve as a state-of-the-art winemaking facility but also to offer guests opportunities for hands-on learning through cooking classes, wine appreciation seminars and culinary events.  Its unique architectural and landscape design includes a demonstration kitchen, intimate dining spaces and outdoor entertainment areas, among other amenities, that facilitate the exploration and enjoyment of food and wine.  Experience the winery for yourself.

Chef Koommoo cooked with Marriott Hotel properties around the globe, including Canada,  Japan, England and Australia before joining the winery.  Originally from Thailand, Dan is a graduate of Le Cordon Bleu, Ottawa.  He is dedicated to using fresh cuisine from sustainable resources, including organic fruits and vegetables from nearby Oxbow Farm, designed to complement Novelty Hill's and Januik's award-winning wines.

Take I-90 east or 520 east to I-405 north:

· Exit at NE 124th St. exit - Exit 20B

· Take the NE 124th St. ramp

· Keep RIGHT at the fork to go on NE 124th

Letters have been sent to Culinary School Directors and application deadline is November 1,2009 for Scholarship to be given out at December  14 WSCA Chapter Meeting.

RED CROSS NEEDS OUR HELP

to be added to the on call list to be a volunteer in case of a flooding disaster.

Dear WSCA Members:
 
My name is Brenna Hesch and I am the Mass Care Coordinator at the American

Red Cross serving King and Kitsap counties. I am contacting you with an
idea for a potential opportunity for your members to be involved on a
limited commitment basis that would benefit those in our local community.
As you have heard recently there is a high probability that the entire
Green River Valley will flood this winter sometime between November and
March. This could potentially affect the communities of Auburn, Kent,
Renton, and Tukwila and force thousands of people to evacuate their homes.
We, here at the ARC King and Kitsap Counties, are working to ensure that
in the event of serious flooding that shelter is available for the
displaced families and persons. Included in our mission to provide shelter
for those individuals is the mission to also provide them with three meals
per day. At the moment we are looking at the possibility of establishing 5
or 6 separate shelters that could house anywhere from 250 to 500 people.
This is why I am asking for help; wondering if any of the chefs that are
members of your organization would be interested in volunteering to be on
call (so to speak) to come and help prepare food in the opened shelters
for the first few days of the initial disaster. The ARC would be providing
supplies and menus but we will need experienced hands to help us with the
volume and execution of such a vast operation on short notice. Having
worked in restaurant service myself I understand that most of your members
have demanding full time jobs that require their presence. However, since
there will be 3 meals a day served at the shelter, it is my hope that
there would be at least one meal that their schedules would allow them to
serve at.
