Three meals to enjoy on these chilly nights. Easy and can be made ahead:
Creole Shrimp 1 1/2 pounds large shrimp (thawed, if needed) 1/4 cup pre-diced red onions 3 tablespoons garlic butter
1 1/2 teaspoons Creole seasoning 1/4 cup pre-diced fresh tomatoes 1 lemon (for juice, rinsed) 1/2 cup white wine
Peel shrimp. Arrange in single layer for seasoning; Preheat large sauté pan on medium-high 2-3 minutes. Place onions and garlic butter in pan; cook 2 minutes, stirring occasionally, or until hot. Sprinkle seasoning over shrimp. Add shrimp and tomatoes to onions. Squeeze juice of 1/2 lemon over shrimp (about 1 tablespoon). Cook 1-2 minutes. Add wine and cook 2-3 more minutes or until shrimp are opaque. Serve over rice below or Serve in a Baguette as a tasty PO BOY.
Cajun Beans and Rice
1 tablespoon garlic butter 1/2 cup pre-diced red onions 1 teaspoon Creole seasoning 1 (16-ounce) can light red kidney beans (undrained) 1 (8.8-ounce) package pre-cooked white rice
1. Preheat large saucepan on medium-high 2-3 minutes. Add garlic butter. Add onions and seasoning; cook 4-5 minutes, stirring often, or until onions are browned. 2. Add beans and rice; cover and reduce heat to low. Simmer 8-10 minutes
One bag of Meatballs in the grocer's freezer (approx 35-40)
1 Cup Kidney Beans
1/2 Cup Diced Onions
1 Cup Diced Tomatoes with Juice
1/2 Cup Diced Carrot (frozen or canned)
1/2 Cup Diced Celery
1/2 Cup Uncooked Macaroni
1 Cup Spinach (Fresh is best)
1/8 Cup Beef Base (sub vegetable base if desired)
1/8 Cup Tomato Paste
1 Teaspoon Italian Herbs
2 Cups Water
Slow Cook in crockpot for 4 hours or heat on medium high covered for 30-35 minutes.
Serve with Cornbread and Grilled Cheese Sandwich
Sausage and Peppers over Rice
Serves 4-6
4 cups cooked rice (White or Brown)
2lbs of kielbasa or Smoked Sausage (substitute Turkey Sausage)
2 Cups Smokey BBQ Sauce
1 Cup Frozen Onions and Peppers
1 Tablespoon Minced Garlic
1 Tablespoon Worcestershire
In a 9x13 pan spray bottom with Pam or like.
Pour cooked rice on bottom evenly.
In a mixing bowl combine remaining ingredients and put on top of rice.
Cook covered for 30-35 minutes at 350.
Serve with Caesar Salad and Crusty French Bread |
