MIMI'S HOT CHICKEN SALAD SERVES 8
4 cups chopped cooked chicken
2 tablespoons lemon juice
3/4 cup toasted slivered almonds
1 1/2 cups shredded cheddar cheese
3/4 cups mayonnaise
1/2 teaspoon accent seasoning
2 cups diced celery
4 hard boiled eggs
1 can cream of chicken soup
1/4 cup diced onion
1 jar pimento
1 1/2 cups crushed potato chips
1 teaspoon salt
1/2 teaspoon pepper
In large bowl mix everything Except cheese, potato chips and almonds. Place in 9 x13 dish. Can stay in fridge for 24 hours. Cover with cheese, potato chips and almonds when ready to bake. Bake pre-heated over at 375 for 30-40 minutes uncovered.
Baked Apricots-Serves 8-10
This dish would be great along with all the other Thanksgiving dishes. Easy!
2 1/2 sticks salted butter
4 15 ounce cans apricot halves
1 box of light brown sugar
2 1/2 sleeves of Ritz crackers
Melt Butter. Layer ingredients in 9x13 dish as follows, 1/3 butter,1/2 apricots. 1/2 brown sugar, 1/2 Ritz crackers and then repeat ending with cracker then butter. Bake at 300 uncovered for 1 hour. Enjoy
