Cooking Salmon

Season King or Sockeye salmon with lemon, pepper and garlic. Rub with brown sugar. Add red onion slices on top of the salmon and bake at 325˚F for 20 minutes.

Thank you to everyone who participated in the "Passport to Hollywood" Scavenger Hunt this past Saturday. Audry Symes, Grace Muellher, and Scott and Micah Furlong won prizes for correctly solving clues and turning in a completed "passport".

Prizes were donated by the Hollywood Theatre, Fleur de Lis Bakery, NE Community Center, and HFM volunteer Krish Cline.

Caryn Servis

Did you know that the Hollywood Farmers' Market is run mostly by volunteers?

Each week over 20 volunteers make the market run smoothly. HFM volunteers are lead by staff member Caryn Servis, the Community Volunteer Coordinator. The CVC since 2006, Caryn has throughly enjoyed working with this dedicated and fun group of volunteers. She recently accepted an AmeriCorps*VISTA position with a volunteer advocacy group called Oregon Volunteers. Caryn plans to stay involved with the HFM as a volunteer and is excited to become a new member of the neighborhood when she moves in August.

The Hollywood Farmers' Market will soon be recruiting a new Community Volunteer Coordinator. If you are interested in applying, please email Caryn at volunteers@hollywoodfarmersmarket.org.

Featured Vendor: Classic FoodsClassic Foods

Classic Foods is a supplier to the restaurant trade and is located near the Hollywood District on NE 20th Ave. Our unique ravioli is made with local, seasonal and organic produce, often sourced directly from market vendors. In Italy, our ravioli would be called artiginale, artisan quality, made in small batches from scratch. Many of Portland's finer restaurants feature our ravioli and we do not sell retail at any outlets other than the Hollywood Farmers' Market. Ravioli of our quality is not available in grocery stores since those are mass produced with standard quality products and are pasteurized for long shelf life; this has nothing to do with quality, only easy manufacturing and distribution.

This week we are featuring our Farmers' Market Ravioli with all organic items sourced at the Hollywood Farmers' Market: grilled asparagus, sugar snap peas, carrots, kale, Oregon Gourmet Cheese fromage blanc and ricotta.

We sell various fresh pasta cuts at the market including organic Whole Wheat Penne Rigati with flour from Bob's Red Mill and Spelt Rotini. Other flavors this week include Spinach, Tomato, Herb & Garlic, Black Pepper and Roasted Red Pepper.

We make our own pesto in-house and have the following varieties available in a 4-oz size (perfect for 1 lb ravioli or fresh noodles):

Genovese - basil, toasted pine nuts, parmesan, garlic
Cilantro-Lime - cilantro, lime juice, toasted pepitas
Sun Dried Tomato - sun dried tomatoes, roasted garlic, toasted pine nuts
