Greetings!

Back to school means back to YOU!  After a gorgeous, sunshine-filled summer, fall is quickly approaching and calling you to switch gears and get more grounded.  Now is the perfect time to refocus on yourself and bring more attention to your self-care, which means paying attention to when your body requires rest, exercise, reflection, and maybe even some upgrades to your food and beauty products.  (I have tons of suggestions if you need one!)

Heart surgeon Dr. Mehmet Oz once used the heart as a metaphor for all of us out there who give, give, give to others.  He noted that the heart, like many of us, is responsible for many others receiving what they need to survive.  The heart has to pump out blood to every organ in the body so that they can all function at their best.  Yet the heart knows that if it doesn't fill itself up first, it will have no blood to give.  I encourage you to take a lesson from your very own heart and make a commitment to fill yourself first.  Without question, those who depend on you will be grateful that you did. 

YOU are the only one who can give you what you really need to be happy, balanced and truly healthy, inside and out.  If not now, then when??

 This series is designed to provide an answer to the question,  "What should I eat?" 

We will discuss
which foods to eat  
for optimal health,
which foods to avoid
and why, how to read nutritional labels and
understand organic and whole foods, how to eat for energy, and how to plan and prepare quick and healthy family meals. 

In each two-hour class, we will create and enjoy three delicious, healthy,
easy-to-prepare meals together.

Recipe of the Month
Grilled shrimp and summer vegetable medley 


1 cup quinoa (or rice), rinsed
1 lb. raw wild jumbo shrimp                   
1 large onion, sliced into rings
1 yellow squash, cut into thick slices               
1 red pepper, cut into large chunks
1 zucchini, cut into thick slices                         
1 pint cherry tomatoes
3 tbsp + 1 tbsp extra virgin olive oil                  
freshly-ground black pepper
3-4 garlic cloves, minced                                 
1 tsp Italian seasoning

Heat grill to medium. 

Bring quinoa and 1 cup of water (or vegetable broth)  to a boil.  Reduce heat and simmer for 20 minutes. 

In a large sauté pan, heat 1 tbsp oil on medium heat and add onions.  Cook until slightly browned and soft; set aside.  In a large bowl, toss remaining vegetables, shrimp, garlic and seasonings in 3 tbsp oil.  Place on hot a vegetable sheet or grill basket on hot grill and cook until vegetables are slightly browned and shrimp is pink on each side.  Return to mixing bowl along with caramelized onions and toss.  Serve immediately over cooked quinoa.
