Did you miss our Spring Cleaning detox program?  No worries!  After receiving so much positive feedback from the first group, we are adding a second session!

Recipe of the Month
Creamy asparagus soup

This delicious, dairy-free creamy soup is a prefect transition to Spring, when the weather is still chilly, but Spring foods are abundant.  Enjoy with a crunchy treat such as Dr. Krackers or Mary's Gone Crackers.

1 bunch asparagus, chopped
2 tbsp olive oil
1 yellow onion, chopped
2 cloves garlic, minced
3 1/2 cups vegetable broth
6 oz. coconut cream or freshly-made almond milk*
2 tsp. Celtic sea salt
1 1/2 tsp dried dill
2 tbsp freshly-squeezed lemon juice

Heat oil on medium in a soup pot and add onion, garlic and asparagus.  Sauté for 3 minutes and add broth.  Simmer for 10 minutes and then reduce heat to low.  Stir in coconut cream or almond milk and seasonings. Simmer for 5-10 more minutes and serve warm. 


Optional:  add 1/2 or all ingredients of soup pot to the blender.  Mix until smooth to create an even creamier consistency. 
 

* For homemade almond milk, soak 1 cup almonds in water for 20 minutes to several hours.  Drain and blend almonds with 4 cups fresh filtered water until creamy.  Strain through a fine mesh strainer or cheesecloth (or nylon stocking).  Will keep 3-5 days in the refrigerator.  Use in smoothies, soups, oatmeal, porridge or drink as is.
