Greetings!

Many of us here in the northeast are feeling the effects of a long, cold winter, having been bundled up under layers of clothing for months, and seeking warmth not only from scarves and gloves, but also in the form of "comfort food." 

It is natural to want hearty, warming foods during the winter, when garden-fresh greens and fruits seem a distant memory.  And since we can walk into any supermarket and buy whatever we want at any time, it is understandable that we become disconnected from the foods we are supposed to be eating.  If we can shift our focus, however, from eating what we can be eating to eating what we are meant to be eating, Mother Nature may pleasantly surprise you.

Recipe of the Month
Sprouted lentil soup
 

Sprouts are nature's little bundles of energy.  They have all the nutrients needed to grow a full plant, but concentrated in a tiny package.  They are a great source of protein, and if eaten raw, a rich source of enzymes.

2 cups lentils
6 cups water
1 bunch Swiss chard, chopped
3 cloves garlic, minced
1 bunch cilantro, chopped
2 tbsp fresh lemon juice 
1/3 cup olive oil
Celtic sea salt
freshly-ground black pepper

To sprout lentils: 
Soak overnight in filtered water.  In the morning, drain in a colander, then return to bowl with water and swish around to rinse.  Drain and leave lentils all day in the colander.  Repeat the same process the next day as well.  On the last morning, the lentils will have sprouted.  Rinse one last time.

Place sprouted lentils in 6 cups of water and bring to a boil.  Add chard, reduce heat and simmer for 10 minutes.  In a small skillet, water-sauté garlic and add cilantro until wilted.  Add to soup with lemon juice and salt and pepper to taste. 

If desired, place either half or entire soup in blender and puree to a thick, creamy consistency.  Return to soup pot and serve warm, topped with 1 tbsp of olive oil and fresh black pepper per serving.

note:  if using a Vitamix or other high-speed blender, you may skip the step of boiling the lentils.
