Greetings!
Fall is such a fun time for cooking! Squashes, pumpkins, sweet potatoes, yams, apples and cranberries are abundant and hoping to make their way to your plate. Eating with the seasons can be extremely health-promoting, as it creates balance and stability within the body, and provides for natural detoxification and rejuvenation. Look around at what is coming out of the ground right now - that is exactly what nature has intended for us, and what our bodies need to thrive and repair. Recipe of the Month Basil Pesto & Roasted Sugar Pumpkin
1 sugar pumpkin, cut into wedges 2 cups basil, washed & packed 1/2 cup raw pignoli (pine nuts), divided in two 1/2 cup olive oil + extra for pumpkin 1/4 cup imported parmigiano cheese Celtic sea salt Freshly-ground black pepper
Place pumpkin wedges into a baking dish and drizzle or brush with olive oil, salt and pepper. Bake at 350º for 30-40 minutes, or until fork-tender.
While pumpkin is cooking, combine basil, 1/4 cup raw pignoli and cheese in a food processor, adding oil while machine is running. Season with salt and pepper.
Place remaining pignoli on a baking sheet and add to oven for last 5 minutes of pumpkin cooking time.
Spoon pesto over warm pumpkin, garnish with toasted pignoli, and serve warm.
