Sharing a Recipe for Spinach Gnocchi:
The Charming Italian Way
Kelley experienced first hand the gracious Italian hospitality during her recent trip to Il Borgo and Lessons of Tuscany. One of the many things which captured her heart was the reply she received to a recipe request from Enoteca Del Duca in Volterra. This is where she enjoyed her most favorite meal of the trip - an unforgettable plate of Spinach Gnocchi... here is their delightful response:

Dear Kelley,
Thank you so much for your kind e-mail.
About the gnocchi with truffle, they are very easy to make:
you take some boiled spinach, fresh ricotta cheese, pinch of salt, some nut meg, and you mix all together. You then let the dough rest in the refrigerator for at least an half hour and in the meanwhile you prepare a wide round deep dish with a lot of flour. You then take the dough and shape small gnocchi with your palms and put in the deep dish. Make sure that gnocchi absorb a lot of flour otherwise they break while you cook them. You then have to shake the dish in other that they absorb flour. You let then gnocchi rest in the kitchen for at least 4 hours and sometimes you shake it to make all sides of gnocchi absorb flour. You then put in the freezer and after few hours you cook them in boiling salty water. They will be ready when they bob up.
You then can serve with any sauce you prefer.
With the truffle you should use butter, cream and truffle.
